I love carbs and love baking baguettes. It’s easy and delicious, but had to try creating a gluten free bread...

Baked this bread with 1 cup - rice flour, chia seeds, psyllium husk and flaxseed.. salt, honey for sweetener, yeast. The bread was left to rise for 1 hour and baked at 350F for 60 minutes.

I will work more on the recipe to get a full loaf size bread. Meanwhile this tastes amazing with all the good stuff for your gut health.

Would love to know if anyone has tried to create a gluten free bread...

Skillet Dinner - Spinach and sweet corn baked in tomato sauce.. I love the pop of green from the jalapeño peppers and the onion flower..I’ve used home grown tomatoes (frozen) and fresh spinach from the garden..

Recipe

1 - 2 - full corn on the cob
1 - medium red onion
1 - tomato
1/4 cup - sweet corn kernel
Handful of spinach
1-2 - jalapeños
1 tsp - salt
1 tsp - turmeric
1 tsp - cumin
1 tsp - red pepper
1 tsp - Garam masala
1 -2 tbsp - oil
1/2 cup - water

Method

Blanch handful of spinach and Boil the corn on cob and set these aside. Take an oven proof pan/ skillet add oil to Sauté the roughly chopped onion and tomatoes, toss in the dry ingredients along with blanched spinach and sweet corn. Add water to make a thick gravy.
Place the boiled corn on the cob and layer it well with the gravy. Cook in medium flame for 5 minutes till the corn gets coated with the gravy. Stick the skillet in the oven at 350F for another 10 minutes to bake. Serve warm garnished with cilantro. Jalapeño and a onion flower.

This is a delicious, nutritious Indian snack. Normally had as a Indian breakfast in many regions of India.
This is cooked with flat rice, onions, peanut. I have also added peas, carrots and potatoes.
Have garnished the dish with crispy potato bhajia and cilantro.
Served with a generous squeeze of lime....

      Sometimes all you need is easy quick dinner. Just steamed this     for dinner.

The original recipe is Pain Perdu literally it means “lost bread”. My version of French Toast with delicious fresh fruit topping and roasted almonds served with maple syrup.
The recipe is with 2 egg yolks, 1 cup milk/ 1 cup half & half, 1 tsp vanilla essence, 3 tbsp granulated sugar and butter to toast..
Perfect Saturday recipe.... ♥️♥️
