English Toffee Cheesecake Bowls!

You guys know this is one of my favourite things to meal prep. Depending on your ingredients, they could be anywhere between 150-220kcal - and this one packs 22 grams of protein & 5 grams of fibre.

In a food processor or high quality blender, process:
- 3/4 cup plain Greek yogurt
- 3/4 cup cottage cheese
- 1 scoop protein powder (I used a salted caramel protein but vanilla would work great too)
- 1 serving of vanilla instant pudding mix (7 grams)
- 8-9 drops of English Toffee liquid stevia drops!

Once these ingredients are smooth, divide them into 3 serving size containers, and top with crumbled graham cracker & skor bits! Let these set in the fridge for at least 3 hours before serving. These get better with more time!

There are endless ways you could switch this up with all the different types of sweet drops… I can’t wait to try a few more 👀

WIEIAD as a 30 year old occupational therapist, content creator & wellness girlie WHOSE WEDDING IS IN 3 WEEKS!! This is what I consider a typical day of eating… I try to carbs, protein & fat in each meal and I don’t skip snacks!! 🙅🏻‍♀️

I’ve always considered attempting to make protein gummies but it just seemed like so much work. Rory from .swolebears tested the recipe over 700 times to get it perfect and let’s just say he crushed it. There are four flavours and I am obsessed with them!

Red Thai Curry Turkey Meatballs

Meatballs:
- 1 lb ground turkey
- 1 cup breadcrumbs
- 1 egg
- 1.5 tbsp soy sauce
- 1.5 tbsp red Thai curry paste
- Salt & pepper

Curry:
- 1 cup lite coconut milk
- 2 tbsp red Thai curry paste
- 1.5 tbsp soy sauce
- 4-5 cups veggies (red pepper, peas, broccoli, carrots, red onion are good. I used 1 red pepper, 1 orange pepper, 1/3 diced red onion, and 1.5 cups broccoli)
- Cilantro
- Salt & pepper

Directions:
- preheat oven to 400 degrees & line a baking sheet w parchment paper.
- Add all meatball ingredients to a mixing bowl, combine well & make ~20 meatballs. Bake for 18-20 mins or until fully cooked, turning half way to brown both sides.
- On the stovetop, saute veggies w 1 tbsp olive oil for 7-8 mins, then add the curry paste, soy sauce & coconut milk, covering & stirring on low heat frequently as the meatballs cook.
- Lastly, when the meatballs are cooked, add them to the pan & combine them w the curry sauce.
- Serve as is or with rice. Top w cilantro!!
