A full basket of basil means it's finally time for fresh pesto!
How do you use your basil?

Basil Pesto

In a food processor combine

½ cup toasted pine nuts (or no nuts if you prefer, can also use walnuts)
2 tablespoons fresh lemon juice
garlic clove ( most recipes call for one clove but we are of the opinion there can never be enough garlic )
(To taste) ¼ teaspoon sea salt
freshly ground black pepper

pulse in
2 cups basil leaves
¼ cup extra-virgin olive oil, plus more for a smoother pesto
¼ cup freshly grated Parmesan cheese, optional (is cheese really optional )

Use withing a couple days or freeze to enjoy later.
