ESPRESSO, MASCARPONE & ORANGE LIQUEUR TIRAMISU 🍊☕️

If you’re hosting this bank holiday, we have the perfect dessert to end your alfresco lunch or evening dinner party.

Serves: 6
Time: 30 mins (plus chill time)

Ingredients:

500g mascarpone
300ml double cream
100g caster sugar
4 egg yolks
Zest of 2 oranges
1 tsp vanilla extract
2 tbsp Grand Marnier or Cointreau (optional)
250ml espresso, cooled
2 tbsp orange juice
1 tbsp orange liqueur (optional)
250g ladyfingers
Cocoa powder, for dusting

Method:
1. In a heatproof bowl, whisk the egg yolks and sugar over a pan of simmering water for 5 minutes, until pale and thickened. Remove from the heat and allow cool slightly. 
2. Whisk in the mascarpone, vanilla, orange zest and liqueur, if using. 
3. In a separate bowl, whip the cream to soft peaks, then fold into the mascarpone mixture. 
4. Combine the espresso, orange juice and orange liqueur, if using. 
5. Dip the ladyfingers briefly in the coffee mixture and arrange a layer in the base of a dish. Spread over half the cream mixture. Repeat with a second layer. 
6. Cover and chill for at least 6 hours, or overnight. 
7. Dust generously with cocoa powder before serving.

No dinner plans? Perfect! 

Some midweek dinners don’t need meal prep or a strict recipe to follow - just you, your favourite chef pan, and a couple of staple delicious ingredients.

Find a little inspo below for your Wednesday evening dinner. Swap in and out to fit whatever ingredients you already have.

🍴Serves 2

1. Add your favourite pasta shape into a Stellar saucepan and cook according to the packet instructions. (Our favourites are orecchiette or casarecce.)
2. In a chef pan, pour in the oil from a tin of anchovies and fry a finely sliced red onion until soft.
3. Add a punnet of vine-ripened cherry tomatoes and cook until the skins begin to char and burst.
4. Slice a clove of garlic and add it to the tomatoes, along with 8 anchovies, letting them melt away.
5. If you have black or Kalamata olives, add them now, followed by a ladle of pasta water, deglazing the pan. Leave to simmer.
6. Use the back of a fork to gently burst the tomatoes.
7. Add chopped (or dried) basil, chilli flakes, and black pepper.
8. Transfer the pasta into the chef pan, adding a little more pasta water to loosen the sauce.
9. Finish with a little grated Parmesan, stirring until melted.

Serve up and enjoy, maybe alfresco with a glass of wine, or perhaps straight from the pan at the kitchen counter.
