Old-School Fudge Tart
I will always come back to this retro dessert. I can't even remember if I had this at school, but I do remember my mum making this regularly, and it remains one of my favourites. She always used to serve it with chocolate custard, and the cold creamy fudge filling worked great with the warm custard. Traditionally it's topped with grated chocolate, and the filling is incredibly easy to make. You can make your own pastry if you want, but why bother.
Ingredients:
280ml milk
90g sugar
120g butter
60g plain flour
1 tsp vanilla extract
Grated chocolate
Ready made shortcrust pastry, baked to box instructions in an 8 inch pan
In a saucepan, pour half the milk and add in the butter.
Add the flour to the rest of the milk in a jug/bowl and mix until a smooth paste is formed.
On medium heat, bring the butter and milk to nearly boiling until the butter has melted.
Add the paste to the heated milk/butter mixture, quickly add the sugar and immediately whisk until everything is combined and smooth. Add in the vanilla extract and stir. You should end up with a smooth, thick filling.
Pour the hot filling into the baked pastry. Place in the fridge preferably overnight.
Slice, and sprinkle grated chocolate over.
