Strawberry Supreme Cake
Ingredients:
- 1 box (15.25 ounces) strawberry cake mix
- 1 cup water
- ½ cup vegetable oil
- 3 large eggs
- 1 cup fresh strawberries, diced
- 1 package (8 ounces) cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- Fresh strawberries (for garnish)
Instructions:
1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. In a large mixing bowl, combine the strawberry cake mix, water, vegetable oil, and eggs. Mix until well combined.
3. Gently fold in the diced strawberries until evenly distributed.
4. Divide the batter evenly between the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
5. Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
6. In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth. In another bowl, whip the heavy cream with vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
7. Once the cakes are completely cool, place one layer on a serving plate and spread a generous amount of the cream cheese mixture on top. Place the second cake layer on top and frost the top and sides with the remaining cream cheese mixture.
8. Garnish with fresh strawberries on top before serving.

Notes:
1. For added flavor, you can drizzle a bit of strawberry syrup over the layers before adding the cream cheese mixture.
2. This cake can be made a day in advance and stored in the refrigerator until serving.
3. Leftovers can be kept in the refrigerator for up to 3 days.
