Baked Garlic Parmesan Chicken
Ingredients:
4 chicken breasts
3 tbsp butter, melted
3 cloves garlic, minced
½ cup grated Parmesan cheese
½ cup breadcrumbs
1 tsp Italian seasoning
½ tsp paprika
Salt & black pepper to taste
Fresh parsley for garnish

Instructions:
Preheat oven to 400°F (200°C)
Mix melted butter and garlic in a bowl
Mix Parmesan, breadcrumbs, Italian seasoning, paprika, salt & pepper in another bowl
Dip chicken in garlic butter, then coat with Parmesan mixture
Place chicken in a greased baking dish
Bake for 25-30 minutes until chicken is cooked through and golden
Garnish with parsley and serve hot

Roasted Root Vegetable Bake with Feta & Walnuts
Ingredients:
2 sweet potatoes, cubed
2 carrots, sliced
2 parsnips, sliced
1 beetroot, cubed
1 red onion, wedges
2 tbsp olive oil
1 tsp garlic powder
1 tsp Italian seasoning
Salt & black pepper
½ cup feta cheese, crumbled
¼ cup walnuts, chopped
Fresh parsley for garnish

Instructions:
Preheat oven to 400°F (200°C)
Add vegetables to a baking dish
Drizzle with olive oil, garlic powder, Italian seasoning, salt & pepper
Toss well to coat
Roast for 30-35 minutes until tender and golden
Add feta and walnuts on top
Bake 5 more minutes
Garnish with parsley and serve warm

Loaded Avocado Toast with Feta, Walnuts & Honey 🥑🍯
Ingredients
2 thick slices sourdough or multigrain bread, toasted
1 large ripe avocado
½ lemon, juiced
Pinch of salt + pepper
½ cup cherry tomatoes, halved, red + yellow mix
⅓ cup feta cheese, crumbled
¼ cup walnut halves, toasted
2 tbsp dried cranberries
1 tbsp extra virgin olive oil
1–2 tsp honey or hot honey
1 tbsp fresh parsley or chives, finely chopped
Flaky sea salt + cracked black pepper
Instructions
Toast the bread slices until golden and crisp.
In a bowl, mash the avocado with lemon juice, salt, and pepper.
Spread the mashed avocado evenly over the toasted bread.
Top with cherry tomatoes, crumbled feta, toasted walnuts, and dried cranberries.
Drizzle with extra virgin olive oil and honey or hot honey.
Sprinkle with fresh parsley or chives.
Finish with flaky sea salt and cracked black pepper.
Serve immediately and enjoy!

Baked Lemon-Garlic Cod with Butter Sauce
Ingredients
4 cod fillets, about 150–180 g each
3 tbsp butter, melted
2 tbsp olive oil
3–4 garlic cloves, minced
2 tbsp fresh lemon juice
1 tsp lemon zest
1 tsp Dijon mustard, optional
½ tsp paprika
½ tsp salt, or to taste
¼ tsp black pepper
2 tbsp fresh parsley, chopped
Lemon slices, for topping
Extra lemon wedges, for serving

Instructions
Preheat the oven
Preheat your oven to 200°C / 400°F. Lightly grease a baking dish.
Pat the cod dry
Use paper towels to dry the cod fillets. This helps the seasoning stick and prevents excess water in the dish.
Make the butter sauce
In a small bowl, mix together melted butter, olive oil, minced garlic, lemon juice, lemon zest, Dijon mustard if using, paprika, salt, and black pepper.
Season the fish
Place the cod fillets in the baking dish. Spoon the lemon-garlic butter sauce evenly over the top.
Add lemon slices
Place a few lemon slices over or around the cod.
Bake
Bake for 12–15 minutes, depending on thickness, until the cod flakes easily with a fork and is opaque throughout.
Finish and serve
Spoon some of the pan butter sauce over the fish. Sprinkle with fresh parsley and serve with lemon wedges.

Grilled Shrimp Lettuce Wraps with Avocado Sauce
Ingredients:
200 g shrimp, peeled and deveined
1 tbsp olive oil
1 tsp garlic powder
1 tsp lime juice
Salt and pepper to taste
6 large lettuce leaves
Avocado Sauce:
1 ripe avocado
1 tbsp Greek yogurt
1 tsp lime juice
Salt and pepper to taste

Steps:
Preheat grill or pan to medium-high heat.
Toss shrimp with olive oil, garlic, lime juice, salt, and pepper.
Grill 2–3 minutes per side until pink and cooked through.
Blend avocado, yogurt, lime juice, salt, and pepper until smooth.
Place shrimp in lettuce leaves, drizzle with avocado sauce, and roll up.
