First of all I hope the pictures are easy enough to understand because I think if I tried to explain how to fold the spring rolls in writing it'd be more confusing 😅 (I don't know why I used a white plate with white wrappers for these pics🤡)

Now for some tips 🥳

I gathered most of these tips from the lovely and from things I noticed while cooking myself~ Check out their website for even more useful tips for making spring rolls!

| You can usually find spring roll wrappers in the freezer section of Asian supermarkets.

| To defrost the spring roll wrappers, you can either leave them overnight in the fridge or defrost them for 30 minutes on the counter.

| To prevent them from drying out once you've opened the package, it's recommended that you cover them with a damp towel.

| If they do end up drying out you can take a few wrappers and cover them with a damp towel and microwave them for about 10 seconds on medium to soften them up.

| The spring rolls themselves can also dry out once you've finished rolling them so covering them with cling film before frying can be a great help! Since I wasn't planning on making too many in one go I didn't bother with this step but if you're making large portions I definitely recommend it.

| When you're done with your wrappers you can refreeze them but you definitely want to reseal them and make sure it's as airtight as possible or the next time you use them they could break apart.

| Now, when rolling your spring roll try to avoid leaving any gaps in the roll where air pockets could form or you could find that oil will seep into the roll when you fry it.

| It also helps to place the spring roll so the cornstarch sealed side is pressed down onto the tray as that increases the chances that your spring roll will stay closed.

| Finally, cornstarch tends to sink to the bottom of the bowl when you make the slurry so expect to have to mix it again while you're using it.

In the next collage you can see some of my imperfect frying skills, the black bits had to be scrapped off in the end 😅 If anyone has any frying tips for me I'm all ears 🤗

So this is in no way a perfect recipe for spring rolls. I simply threw together whatever I had at the time but that just shows how uncomplicated spring rolls can be if you just want to make a quick dish.⁣⁣

Since I already had bulgogi ready to use I didn't need to cook any more minced meat but I've included how to use mince meat for this recipe. You could also follow the bulgogi recipe I used in one of my earlier posts ✨⁣⁣

I mainly followed the YouTube tutorial How To Make Spring Roll With Shrimp And Pork by Oliver Richardson~⁣⁣
⁣⁣
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 𝐋𝐢𝐬𝐭:⁣⁣
⁣⁣
• Frozen spring roll wrappers⁣⁣
• Lettuce⁣⁣
• Carrots⁣⁣
• Onions⁣⁣
• Garlic⁣⁣
• 1/2 tbsp Oyster sauce⁣⁣
• King prawns ⁣⁣
• Bulgogi or Minced meat⁣⁣
⁣⁣
For 350g Minced Meat:⁣⁣
• 1/2 tsp Salt⁣⁣
• 1/4 tsp Black pepper⁣⁣
• 1/4 tsp Garlic powder⁣⁣
• 1 tbsp Water⁣⁣
• 2 tsp Shaoxing Rice wine⁣⁣
• 2 tsp Cornstarch⁣⁣
• 1 tsp Vegetable oil⁣⁣
⁣⁣
For the Cornstarch Slurry:⁣⁣
• 1 tbsp cornstarch⁣⁣
• 1/4 cup water⁣⁣
⁣⁣
• Vegetable oil⁣⁣
⁣⁣
⁣⁣
𝐑𝐞𝐜𝐢𝐩𝐞:⁣⁣
⁣⁣
• Combine the minced meat with the above ingredients and let marinate for 10-15 minutes ⁣⁣
• Thinly slice your vegetables⁣⁣
• Season the prawns with salt and black pepper to taste⁣⁣
• Heat a frying pan over high heat and add in 1 tbsp of oil. Add the meat and fry until brown then set aside.⁣⁣
• Add another tbsp of oil and fry the onion and garlic for 30 seconds then add the rest of your vegetables to the pan.⁣⁣
• Stir fry the veg on medium heat for 2 minutes then add the minced meat back into the pan.⁣⁣
• Add in the oyster sauce and stir well.⁣⁣
• Spread out the mixture to cool (on a baking sheet if possible but I left mine in the pan)⁣⁣
• Discard any excess liquid⁣⁣
⁣⁣
• In a small bowl mix the cornstarch and water together ⁣
• Spoon in about a tbsp of the mixture and 2 cooked prawns into the wrapper and roll it up (my next post will have more pictures of how to roll it!)⁣⁣
• Use the cornstarch slurry as glue to seal the roll⁣⁣
• Heat about 1 1/2 inches of oil (although I never manage to use that much) and carefully slide in the rolls. Turn them around occasionally and fry them for about 3-5 minutes.⁣⁣
