Fragrant Coconut Fish Curry with sweet potato.
We try out a new Thermomix recipe every week, but we still have over 100 in our ‘To Try Out Soon’ list! This was one of them, and I’m glad we got to it this time 😋

It is delicious, and works really well with brown rice. The recipe is for 6 portions so I made 2/3 quantity for our family of 4, and we still had leftovers!

To my delight, there is 20+10 minutes of free time while the cooking happens. The whole dish is ready from basic ingredients in 35 minutes 💃🏻🙌😄

I love how the first step of the recipe is to ensure you have a Blade cover.

Thai red curry is quite spicy, so I halved the curry paste. I think this will work with other curries too, and I’m planning to try the less spicy Thai yellow curry next time. Yum! 😍

Since coming back from holiday I’ve been struggling to fit back in (not helped by the British weather; 16°C, wind and rain for a week).

I want to make tasty, nutritious & affordable food for my family but I don’t want to spend time cooking it 🫣
So this evening I opted for one of our favourite comfort meals, “Orange soup”. The kids were super happy when I told them what we were having, and licked their plates clean 🥰

I love this filling, heartwarming soup that’s also fresh and not overcooked, it’s such a reliable recipe.
What I love the most at this moment is the 14 minutes free time I get while the Thermomix is doing the cooking!

It was long enough to get some clearing up done, as well as sort out another Vinted listing 🥳🙌

In my family we love a salad! This time we opted for a classic chunky mix which we normally dress with salt, olive oil and lemon/ vinegar, but I’ve been “homesick” after my holiday in Japan so I simply had to try out this Japanese dressing recipe from Cookidoo.

I was so impressed! 🤩
I’m glad I didn’t make it by hand because I could never have achieved this smooth, silky texture. The balance of flavours is pretty good, only I halved the sweetness by substituting 40 g of maple syrup with 20 g of honey.
I also used extra virgin olive oil instead of canola oil. This recipe makes a whopping 450 g of dressing so unless you’re hosting a salad party, make a third or half quantity.

And being on a Japanese wave, I added “kaiso sarada” seaweed and toasted sesame seeds, which made my salad the same as what I was enjoying in Japan 🥰🇯🇵

Having a Thermomix on your worktop means you can use it in a myriad of ways, including as a timer so you don’t burn your sesame on the hob. Those who have burned sesame know what I mean; it takes forever to turn lightly brown, and then 20 seconds later it’s burnt! 😅🤣🤣

Kids are ill, I’m exhausted, but we all appreciate good food. Grateful again for the Thermomix, which always saves the day.

Easy and delicious Brazilian cheese puffs straight out the oven, and a fresh crunchy salad. Both took less than an hour, including clear-up and two washes of the mixing bowl (if I was cooking them by hand just the salad would have taken me this long!)

(English below) Честит ден на българската писменост и култура! Вече съм в Англия, но от Япония сякаш си донесох слънчево и топло време 🌞
Наслаждаваме му се подобаващо с приготвяне на поредната 2.5 килограмова партида кисело мляко (навън е 28°С и не ми се чакаше млякото да изстине, затова го изстудих за нула време в леген с вода 😄) - преди да изведа децата да караме колела 🚴🏻‍♀️

Поиграхме, покарахме, пък попаднахме на чуден бъз - та си набрахме за сироп 🤩

Вкъщи се подкрепихме с айрян и домашен таратор - вече знаете как става за 10 минути в Терми. При нас храната е вкусна, но време за готвене не се губи, за да остане повече за приятни неща! 😄

Децата се научиха да си служат с китайски клечки 🥢🥳

Направихме и сиропа от бъз, утре го чакаме да стане!

Happy Bulgarian Culture Day! 🇧🇬
I’m back in the UK, and it seems I brought some fab Japanese weather with me! It’s 28°C today and we are celebrating it with some traditional Bulgarian pursuits like making 2.5 kg of yogurt. I cooled the hot milk down in a tub of cold water so I didn’t have to waste time before taking the kids out for a cycle ride 🚴🏻‍♀️

We rode our bikes, we played, and we came across some irresistible elderflower - so we picked some to make a cordial.

At home we enjoyed the warm weather with some Tarator and ayryan (Bulgarian drinking yogurt, slightly salty). You’ve already seen how tarator can be made in 10 minutes in the Thermomix; our food is great but we don’t waste time making it, so we get to do nice things instead 😍

The kids learned how to use grown-up chopsticks 🥢🥳

We also made elderflower cordial, we’re hoping it will be ready to drink from tomorrow!

Kenroku-en is one the three most famous gardens in Japan and is in Kanazawa, my third hometown. It is absolutely stunning! 😍

It was busy but magical as always.
May is the season of fresh green leaves, the sun is already quite hot, and you want to seek shade and breathe in the cool air around the streams, fountain and lake.
