With enough light and a warm environment, it grows very fast ☀️. The stems stay tender, and the leaves keep a fresh green color and a clean, slightly sweet taste 🌿. Indoors, the conditions are more stable, so it’s easier to control and usually has fewer pests.

After about 2–3 weeks, once the plant is well established, you can start harvesting. Just cut the upper stems and leave the lower nodes in place so it can keep regrowing. This way, you can harvest again and again over time.

Fresh water spinach is great for stir-fry, soups, or simple cooking. It’s fresh, fast-growing, and feels very rewarding when you see it keep coming back after each cut 🌿
