Congee with Chinese pearl barley and fresh yam

Ingredients
Fresh yam
Chinese pearl barley
Rice
Minced pork-without fat or little bit of fat (can use lean pork )
Carrots
Shiitake mushroom -3 pcs
Scallion or coriander
Salt

Marinated sauce for minced pork
Light soy sauce
White ground pepper
Cornstarch
Cooking oil

Procedure
1.Peel the fresh yam and crush but not too finely
2.Soak in water the shiitake mushrooms and cut into pieces
3.Marinate the minced pork with the marinade sauce and make meatball
4.Heat the wok and add the Chinese pearl barley mix until the size become bigger
5.Slice the carrots into small pieces
6.Boil water and add the rice and Chinese pearl barley and cook for 15 minutes
7.Add the shiitake mushrooms and the crushed fresh yam and cook for 5 minutes
8.Add the meatball,carrots,ginger and salt cook for 8-10 minutes
9.When cooked sprinkle with scallions

Tips-if there is not enough water,add hot or boiling water

Winter melon with chicken legs


Ingredients
Winter melon
Chicken legs
Cordyceps flower
Ginger
Red dates

Marinade sauce
Oyster sauce
White ground pepper
Sugar
Cornstarch

Procedure
1.Debone the chicken legs and marinate with the marinade sauce and rest for 30 minutes
2.Soak the cordyceps flower for 10 minutes and wash well
3.Remove the seeds of the red dates
4.Peel the winter melon and cut into thin slices
5.Place the sliced winter melon in the pan and add the cordyceps flower,marinated chicken legs,red dates and sliced ginger
6.Boil for 20 minutes on low heat

Tips
1.Don’t add salt or soy sauce to prevent the winter melon for becoming sour
2.Don’t add water because winter melon is watery

Stir-fry amaranth with shrimp sauce


Ingredients
Amaranth
Shrimp sauce/paste (finely ground)
Garlic
Water (if needed)

Procedure
1.Wash and cut the amaranth and separate the stem and leaves
2.Saute the garlic until golden brown and add the shrimp sauce and mix until aroma comes out
3.Add the amaranth stem and mix and add the leaves and mix well
4.Cook for 2 minutes or until cooked

Tips-add water if needed and don’t overcook

Hairy gourd with fish tail soup

Ingredients
Hairy gourd
Grass carp tail
Ginger
Boiling water/hot water
Gojie berries
Green onions
Salt

Fish tail sauce
Cooking oil
Light soy sauce
Green onions or scallions

How to cook the sauce
1.Heat the pan/wok and add oil
2.Add the scallions and turn off the heat
3.Add light soy sauce

Procedure
1.Peal and slice the hairy gourd
2.Fry the grass carp tail until golden brown
3.Add boiling water and add the ginger and hairy gourd
4.Boil for 15-20 minutes
5.Add gojie berries,salt and green onions
6.Remove the fish tail and place it on a plate and add the sauce

Yam and snow fungus dessert


Ingredients
Fresh Chinese yam
Snow fungus
Dried longan
Red dates
Gojie berries
Rock sugar
Milk-any kind of milk and adding milk is optional

Procedure
1.Soak the snow fungus in water for one hour or until it becomes soft,fluffy and expands significantly,trim off the hard,yellow,woody base with scissors,rinse well and tear into small pieces
2.Peel and crush the fresh yam
3.Remove the seeds of the red dates and cut into 2-3 pieces
4.Boil water and when it boils add all the ingredients except the gojie berries and milk
5.Cook or boil for 15 minutes
6.When cooked add the gojie berries and milk

Tips-You can add the crushed yam 5 minutes before the dessert is cooked so that the yam is crispy
