I may have just created my most unusual marshmallow yet... ✨

And no — it doesn't taste like a traditional marshmallow at all.

When sugar is replaced with erythritol, the result is something completely different: lighter, airier, less sweet, and with a much more pronounced fruit flavour.

For this experiment, I used apple and raspberry purées, and the fruit truly takes centre stage.

So why make it this way?

Recently, my mum was diagnosed with diabetes, which inspired me to explore lower-sugar alternatives to some of my favourite treats.

This version won't replace a classic marshmallow — they're simply different desserts. But it has some advantages of its own:

✨ No sugar
✨ Very low in calories
✨ More natural fruit flavour
✨ A lighter texture

I'm still experimenting, but this feels like a promising start.

Can we talk about zefir for a moment? 🤍

Because every time someone tries it for the first time, I see exactly the same reaction:

"What is this?!"

And then, a few seconds later:

"Can I have another one?"
