Noon chai pours pink into dawn,
salt on the tongue like snowmelt.
Rice comes in mountains, not mounds,
for haakh to lean against.

Lotus stem crunches quiet in _nadur yakhni.

Kahva lifts almonds to your lips
like prayer beads made of steam.

Here's the recipe

Ingredients:
For Dough:
- 6-7 bread slices
- 1/2 cup curd
- 1/2 cup fine poha (soaked in water)
- Salt (as per taste)
- 1 tsp chilli flakes

For Filling:
- 3-4 boiled potatoes
- 1 cup green peas
- 1 cup sweet corn
- 1/2 cup chopped onions
- 2 green chillies (finely chopped)
- Salt
- Turmeric powder
- Chilli powder
- Chicken masala

Preparation:
For Dough:
- Mix all ingredients and keep aside for 15 mins
For Filling:
- Saute onions and green chillies
- Add salt, turmeric, chilli powder, and chicken masala. Mix well
- Add green peas and sweet corn. Saute for 5 mins
- Add boiled potato and cook for 5 mins
Assembly:
- Drizzle 1 tsp oil on dough
- Take a small portion, flatten it, add 1 tsp filling, and wrap to form a ball
- Fry in appam pan till golden brown on both sides
- Serve with tomato sauce!

Steaming hot Enduri Pithas, straight from the heart of Odisha! 🍲❤️ These traditional rice cakes are a staple at Prathama Ashtami festival, celebrated to bless the oldest child in the family. The aroma of turmeric leaves infuses these delicate cakes, making them irresistible. 🍃 A symbol of love, tradition, and heritage. Try making Enduri Pitha at home and share the joy with your loved ones!

*Get Ready for the Ultimate Enduri Pitha Recipe! 🎉*

Here's what you'll need:

- 1 cup urad dal (soaked for 4 hours)
- 1 cup rice (soaked for 4 hours)
- 1 cup grated coconut
- 1/2 cup jaggery
- 1/2 tsp green-cardamom powder
- Turmeric leaves or banana leaves for steaming
- Water

*Let's Get Started! 🚀*

1. *The Soaking Saga:* Wash and soak rice and urad dal for 4 hours. Yeah, it's a long wait, but trust us, it's worth it! 😊
2. *Grind to Perfection:* Make a fine paste of urad dal and rice. Don't overdo it, or it'll be too smooth. We want a bit of texture! 💪
3. *Ferment Like a Pro:* Let the batter ferment for 5-6 hours. If it's summer, it'll be done in a flash.
4. *Coconut Magic:* Cook jaggery and coconut on medium flame until it's golden brown (5-7 minutes). Add cardamom powder and mix well. Let it cool down! 😎
5. *Leafy Greens:* Wash and pat dry turmeric leaves. Grease with a little ghee (because everything's better with ghee, right? 🤤).
6. *Assembly Time:* Spread spoonful of batter on the leaf, add coconut stuffing, and fold it like a pro! 💁‍♀️
7. *Steam Power:* Steam for 10-12 minutes or until done. Your kitchen will smell like a Odia heaven! 🌟

Rustic mushroom garlic loaf

Ingredients:
mushroom thinly sliced -1 cup
butter - 2 tbspn
garlic thinly sliced - 1/4th cup
dried herbs - 2 tbspn
grated cheese - 1 cup
maida - 3 cups
salt- 1 tspn
sugar - 1 tspn
instant yeast - 2 tspn
warm water - 1 and 1/2 cup

Preparation:

Saute the mushroom slices in butter till it's crispy and no moisture left
take out in a bowl
then saute the garlic slices in the same pan and take out in a bowl once crispy

now in a small bowl take the yeast and add 2 tspn of warm water. keep for 5-10 mins

in another big bowl , take flour, add sugar,salt, dried herbs, grated cheese, sauted mushrooms and garlic.
mix well

now add the yeast solution to it. mix well.
add luke warm water and mix them with the help of a spatula.
keep mixing for 5 mins to make a soft and bit runny dough - do not make it tight.

transfer the dough to a greesed bowl and cover it with cling sheet.
keep it in a warm place for about 1-2 hours

The dough will double the size. punch it and knead it with the help of a spatula for about another 1min.

now transfer it to the baking mould lined with butter sheets.

keep it for 1hr to rise again.

now preheat the oven at 250 degree and bake the dough for 25 mins.

once done take out the baking mould and keep it outside to cool down.

your yummy mushroom garlic bread is ready
cut into slices , spread butter or cheese onto it with some toppings and enjoy 😋
