β€’ Water – 1 tbsp

For the Paneer Stuffing

β€’ Oil – 2 tbsp

β€’ Fennel seeds – Β½ tsp

β€’ Cumin seeds – Β½ tsp

β€’ Coriander seeds – Β½ tsp

β€’ Green chillies – 2, finely chopped

β€’ Hing (asafoetida) – a pinch

β€’ Curry leaves – few

β€’ Onion – 1, finely chopped

β€’ Carrot – 1, finely chopped

β€’ Capsicum – Β½, finely chopped

β€’ Salt – to taste

β€’ Turmeric powder – Β½ tsp

β€’ Cumin powder – Β½ tsp

β€’ Coriander powder – Β½ tsp

β€’ Aamchur powder – Β½ tsp

β€’ Kashmiri red chilli powder – Β½ tsp

β€’ Boiled potatoes – 3–4 medium, mashed

β€’ Chopped coriander leaves – 2 tbsp

For the Paneer Center

β€’ Paneer – cut into thick pieces

β€’ Salt – to taste

β€’ Black pepper – to taste

For the Coconut Sesame Chutney

β€’ Roasted sesame seeds – 2 tbsp

β€’ Garlic cloves – 3–4

β€’ Green chillies – 2

For the Tempering

1 tsp cardamom powder
1 cup milk powder

1 tbsp ghee
A few strands of saffron (kesar)
For the Toast
6–8 bread slices
Oil or ghee for frying
For the Sugar Syrup
Β½ cup sugar
Β½ cup water
A few cardamom pods or Β½ tsp cardamom powder
A few strands of saffron
For Garnishing
Chopped nuts (almonds, pistachios, or cashews)
Saffron strands

Step 1: Prepare the Mango Filling
Add the mango pulp to a blender jar.
Add sugar, cardamom powder, milk powder, and milk.
Blend everything into a smooth paste.
Heat ghee in a pan and add the prepared mango mixture.
Add saffron strands and cook on low to medium heat, stirring continuously.
Cook until the mixture thickens and leaves the sides of the pan.
Turn off the heat and let the mixture cool completely.
Step 2: Prepare the Bread Toast
Trim the edges of the bread slices.
Cut each slice into desired shapes (triangles or rectangles).
Deep-fry the bread pieces until crispy and golden brown.
