This weekend I did not cook because my family went for a mission. So my pots rested a bit. Maybe they were happy. 😄

We visited new partnership leaders who we hope to minister with in their community using books. That was very special because I love books, and I believe books can help people learn about God, family, faith, and life.

We also met a guest from CLC Chile, and that was fun too. We ate Ethiopian food together. I really love injera and all the different stews served in one big tray. Eating from one tray as a family is very fun because everyone is sharing, talking, laughing, and reaching for the yummy food. It feels like love on a plate.

Today, I am not highlighting food. I am focusing on the books God has allowed me to write.

I wrote my first book when I was 5 years old, and it was published when I was 6. Now I have 4 published books and 5 more coming this year. I thank God because I know this is His grace.

My favourite book is Hey! I Am Chef Ethan because it tells my cooking story, my faith story, and how I started learning in the kitchen with my family.

I am selling 100 copies of this book so I can raise money to build my outdoor kitchen. Then my cooking show can start in July this year when I turn 10 years old. I am very excited because I want to cook, learn, make small mistakes, laugh, and share yummy food with everyone.

What other ways do you cook chicken breast?

Last weekend but one, my mum, Muthoni Omukhango and I made ricotta cheese for the first time. We have made it a few times now in the last two weeks, and it is still so much fun. I still think it is amazing how milk can turn into cheese.

To go with it, I made spinach-stuffed chicken with baked tomatoes. It was yummy and looked very nice on the plate.

Chicken is my favourite dish to make because it was the only meat/protein I could eat for the first five years of my life. So chicken and I are not just friends. We have history.

Did you know you can cook chicken in a million ways? Okay, maybe not a million, but there are so many ways. I have boiled it, shallow-fried it, deep-fried it, baked it, grilled it, and now I have made stuffed chicken.

This was a fun kitchen adventure with my mum.

Over the weekend, I had a conversation with my mum Muthoni Omukhango about why we do not have plenty of cheese in a country with so much milk. That question stayed in my mind, and then my mum challenged me to try making homemade cheese, just like she was challenged by her hosts in Italy.

So I made my very first ricotta cheese!

It was such a fun experience working with my mum in the kitchen. I enjoyed learning something new and seeing milk turn into cheese right in front of my eyes. It felt a bit like a science experiment, but a very yummy one.

A big thank you to my dad Patrick Omukhango for going over and beyond to get me muslin cloth and kosher salt, because they are not easy to find in our local shops.

Also to my siblings Abiah Omukhango and Oracles on Paper by Gabriella Omukhango for cheering me on.

I am happy my first ricotta adventure turned out well, and now I am even more excited to keep trying new things in the kitchen.

Yesterday I made a French Rib Eye, and it felt really special.

For the first 5 years of my life, from age 0 to 5, I was hyperallergic and could not eat beef at all. Then on my 5th birthday, I tasted beef for the very first time. I loved it so much, and it became a very happy memory for me.

This simple French Rib Eye was inspired by my mum, Dr Muthoni Omukhango, and her trip to France last month. I like this dish because it feels a little fancy, but it is actually very easy to cook with only a few ingredients. No long story in the pan, just good flavour doing its job.

What I used:
1 Ribeye Steak
Salt and pepper
3–4 tablespoons vegetable oil
4 tablespoons butter
6–8 sprigs fresh thyme
2 garlic cloves, smashed (I skipped this because one of my family members does not take garlic well)

I love that this recipe is simple and not too busy. The steak is seasoned with salt and pepper, then cooked in oil until nicely browned. After that, butter, garlic, and thyme are added to give it that lovely rich flavour.

What I enjoyed most was how easy it was to make with just a few ingredients. It reminded me that good food does not always need many things. Sometimes the simplest meals can feel the most special.

This was not just about cooking steak. It was also about memory, gratitude, and trying something that once was not possible for me. I am thankful for how far I have come.

I really like following my mum Muthoni Omukhango on her travels. Every time she is away, she calls to tell me and my family about all the fun things she is seeing and doing.

Her last trip to Europe was extra exciting for both of us because we both really love cheese, and there was sooo much of it in Italy, Poland, and France!

When she came back, I made my first Carbonara with her. She had just eaten Carbonara at an Italian restaurant (Taverna dei migliori) last week and said it was the best food she had ever eaten in her whole life, so I was very excited to try making it too.

Mine did not come out as creamy as we wanted, but it was my first time making it, and I had so much fun cooking with my mum. I used Grana Padano cheese instead of Parmigiano Reggiano cheese that the recipe had listed.

My family really enjoyed it too, even though we had to cook the pasta again because the first one was still a bit underdone.

Also… grating the cheese with a small grater was such a struggle! I think my next project is getting a proper grater.
