Cookies and Cream Cake With Oreo Cream Frosting

Ingredients

For the Chocolate Cake:

2 cups (250g) all-purpose flour

1 ¾ cups (350g) granulated sugar

¾ cup (65g) unsweetened cocoa powder

2 tsp baking powder

1 ½ tsp baking soda

½ tsp salt

1 cup (240ml) whole milk

½ cup (120ml) vegetable oil

2 large eggs

2 tsp vanilla extract

1 cup (240ml) hot water or hot brewed coffee (for enhanced chocolate flavor)

For the Oreo Cream Filling and Frosting:

2 ½ cups (600ml) heavy whipping cream (cold)

¾ cup (90g) powdered sugar

1 tsp vanilla extract

15 Oreo cookies, crushed into fine to medium chunks

Optional Garnish:

Extra whole Oreos

Crushed Oreos for the sides or top

Chocolate drizzle or ganache

Instructions

Preheat your oven to 350°F (175°C). Grease and line two 8-inch (20cm) round cake pans with parchment paper.

In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt. Stir to combine.

Add milk, oil, eggs, and vanilla to the dry ingredients and whisk until smooth. Pour in the hot water or coffee gradually while mixing on low speed. The batter will be thin.

Divide the batter evenly between the two prepared pans and bake for 30–35 minutes or until a toothpick inserted in the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.

For the frosting, beat the cold heavy cream in a large mixing bowl using a hand or stand mixer until it begins to thicken. Add powdered sugar and vanilla, then continue beating until stiff peaks form.

Gently fold in the crushed Oreos until well combined. Keep the cream chilled until ready to use.

To assemble, place one cake layer on a serving plate. Spread a generous layer of Oreo cream over the top. Place the second layer on top and cover the entire cake with the remaining Oreo cream.

Decorate with extra Oreos on top, a sprinkle of crushed Oreos, or a drizzle of melted chocolate.

Refrigerate the cake for at least 1 hour before slicing for best texture and flavor.

Romany Creams Recipe
Ingredients:
• 500g butter (room temperature)
• 1 cup caster sugar
• 1/4 cup icing sugar
• 1/4 cup oil
• 1 egg
• 1 tbsp vanilla essence
• 4 cups cake flour
• 1 tsp baking powder
• 125g cocoa powder
• 2 cups medium desiccated coconut
• 450g plain chocolate (melted)
Method:
1. Mix Wet Ingredients: Using an electric mixer, beat together the butter, oil, caster sugar, and icing sugar until light and fluffy (about 3-4 minutes).
2. Add Egg & Vanilla: Add the egg and vanilla essence, and mix for another minute.
3. Add Dry Ingredients: Gradually add all the dry ingredients (cake flour, baking powder, cocoa powder, coconut), and mix by hand to form a soft dough.
4. Chill Dough: Wrap the dough in cling film and chill for 20 minutes in the fridge.
5. Preheat Oven: Preheat your oven to 180°C.
6. Roll Dough: On a floured surface (or using cling film over the dough), roll out the dough and use a fork to create a textured surface.
7. Cut and Bake: Use a cookie cutter to shape the dough, then place the shapes on a greased baking sheet. Bake for 12-15 minutes, then cool.
8. Assemble Biscuits: Once the biscuits have cooled, turn half of them upside down. Spoon the melted chocolate onto one biscuit and gently press another biscuit on top. Let the chocolate set before serving.
9. Storage: Store in an airtight container once the chocolate is fully set.
Tip: You can experiment with flavors by using different types of chocolate, such as strawberry-infused Lindt chocolate, for a unique twist!

Ingredients
Meat Filling:

450 g ground beef

1 medium yellow onion, diced

2 tsp minced garlic

60 g taco seasoning

120 ml water

410 g canned fire-roasted diced tomatoes (with juices)

115 g canned green chiles

425 g canned black beans, drained and rinsed

Assembly:

18 corn tortillas

650 g shredded jack and cheddar cheese blend

For Serving:

1–2 medium tomatoes, diced

1 bunch green onions, sliced

Sour cream, to taste

Instructions
1. Preheat the Oven:
Set oven to 175°C (350°F). Lightly grease a 23x33 cm (9x13 inch) baking dish.

2. Make the Meat Filling:
In a large skillet over medium heat, cook the ground beef and onion until the beef is browned and onions are soft.
Add garlic and cook for 1 more minute. Stir in taco seasoning and water.
Mix in the diced tomatoes, green chiles, and black beans. Let it simmer until everything is heated through.

3. Assemble the Layers:
Place 6 corn tortillas in the bottom of the baking dish, overlapping slightly to cover the surface.
Spread one-third of the meat filling over the tortillas, then sprinkle 215 g of cheese on top.
Repeat the layers twice more (tortillas, meat, cheese) to create three full layers.

4. Bake:
Cover the dish with foil and bake for 30–40 minutes, or until bubbly and the cheese is fully melted.

5. Rest and Serve:
Let it rest for 10 minutes before slicing. Garnish with diced tomatoes and sliced green onions.
Serve with sour cream on the side.

🧁 Instructions
Prep the Pan:
Preheat oven to 350°F (175°C). Grease and flour a 9-inch springform pan.

Make the Cake Batter:
In a large bowl, whisk together flour, cocoa powder, baking soda, salt, and sugar.
Add oil, eggs, vanilla, and buttermilk. Mix until the batter is smooth and lump-free.

Prepare the Cheesecake Layer:

1 cup powdered sugar

1¼ cups heavy whipping cream (cold)

Strawberry Topping:

3 cups whole strawberries, hulled

1/2 cup strawberry jam or glaze

1 tbsp lemon juice

Optional: 1 tbsp sugar (if using fresh strawberries only)

INSTRUCTIONS

1. Make the crust:

Mix graham cracker crumbs, sugar, and melted butter in a bowl.

Press firmly into the bottom of a 9-inch springform pan.

Chill in the freezer for 15–20 minutes while preparing the filling.

2. Prepare the cheesecake filling:

In a large bowl, beat the softened cream cheese until smooth.

Add powdered sugar and vanilla extract; mix until fully combined.

1 cup digestive biscuits or graham crackers (crushed)

4 tbsp unsalted butter (melted)

1 tbsp sugar (optional)

For the cheesecake layer

1½ cups cream cheese (softened)

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream (whipped to stiff peaks)

2½ tsp gelatin + 2 tbsp warm water (or use agar-agar for a vegetarian version)
