RECIPE: BBQ Singaporean Rice
SERVES: 3-4 log | TIME: 35 min

INGREDIENTS:

[BBQ Chicken]
- 300g boneless chicken cubes
- 2 tbsp dahi
- 3 tbsp BBQ sauce
- 1 tbsp soy sauce
- 1 tsp garlic powder
- 1 tsp paprika
- Namak & kali mirch taste ke hisaab se

[Rice & Veggies]
- 2 cup basmati chawal (80% boiled)
- 1 pyaz sliced
- 1 capsicum sliced
- 1 gajar julienne
- 1/2 cup band gobi shredded
- 2 tbsp soy sauce
- 2 tbsp chilli sauce
- 1 tbsp sirka
- 1 tsp kali mirch
- 2 tbsp oil

METHOD:
1. Chicken ko dahi, BBQ sauce, soy sauce, garlic powder, paprika, namak, mirch me 20 min marinate karo. Phir high flame par grill/fry kar ke side rakh do.
2. Wok me oil garam karo, high flame par pyaz, capsicum, gajar, band gobi 2-3 min stir fry karo. Crunchy rehni chahiye.
3. Soy sauce, chilli sauce, sirka, kali mirch dalo aur 30 sec toss karo.
4. Boiled chawal dalo, high flame par 2 min toss karo taake smoky flavor aaye.
5. BBQ chicken add karo, halke haath se mix karo. Upar se spring onion se garnish karo.

SERVE: Garam garam chili garlic sauce ke saath.

ALOO GOSHT - EASY RECIPE
Serving: 4 log

INGREDIENTS:
- Gosht (mutton/beef) = 1/2 kg, boti
- Aloo = 3 medium, bade tukre
- Pyaz = 2 medium, bareek kati
- Tamatar = 2 medium, chopped
- Adrak lehsan paste = 1.5 tbsp
- Dahi = 3 tbsp
- Oil/Ghee = 1/2 cup
- Lal mirch = 1.5 tsp
- Haldi = 1/2 tsp
- Dhania powder = 1.5 tsp
- Namak = 1 tsp
- Garam masala = 1/2 tsp
- Pani = 3-4 cup total
- Hara dhania, hari mirch = garnish

METHOD - PRESSURE COOKER:
1. Oil garam kar ke pyaz golden brown kar lo
2. Adrak lehsan 1 min bhoon lo
3. Gosht dal kar 5 min tez anch par bhoon lo
4. Tamatar + sab dry masala + dahi dal kar 6 min bhoon lo, oil upar a jaye
5. 2 cup pani dal kar cooker band karo, 18 min seeti do
6. Cooker khol kar aloo + 1.5 cup pani dalo
7. Dobara 6 min seeti do, aloo gal jayen
8. 2 min khula paka lo, garam masala + hara dhania dal do

METHOD - PATILA:
Step 5 par: 2.5 cup pani dal kar dhak kar 45 min halki anch par pakao
Step 6 par: Aloo dal kar 15 min aur pakao

TIPS:
- Aloo end me dalna warna toot jayenge
- Shorba patla chahiye to end me garam pani add karo
- Choti boti lo, jaldi galti hai

RECIPE: Khatta-Meetha Aam ka Achar
TIME: 15 min prep + 2 din ready
SERVES: 500g achar

INGREDIENTS:
- Kache aam: 500g, lambe slices
- Sarson ka tel: 1/2 cup
- Rai dana / Kalonji: 1 tsp
- Saunf: 1 tsp
- Methi dana: 1/4 tsp
- Haldi powder: 1 tsp
- Lal mirch powder: 1 tbsp
- Namak: 2 tsp
- Gur / Chini: 2 tbsp

METHOD:
1. Aam dho kar poora dry kar lo. Pani na rahe. Slices me kaat lo.

2. Karahi me sarson ka tel garam karo. Dhuan aaye to gas slow karo.
Rai, saunf, methi dal kar 10 sec bhuno.

3. Haldi, lal mirch, namak dalo. 10 sec bhuno.
Aam dal do. Dheemi aanch par 8-10 min pakao jab tak soft ho jayen.

4. Gas band karke gur dal do. Mix karo. Gur khud melt ho jayega.

5. Poora thanda karke glass bottle me bhar do.
2 din dhoop me rakho, phir fridge me store karo.

TIPS:
- Hamesha dry spoon use karo.
- Zyada meetha chahiye to gur 3 tbsp kar do.
- Shelf life: 1 month fridge me.

CHICKEN MUSHROOM STEAK RECIPE
Creamy • Juicy • Restaurant Style

SERVES: 2 PEOPLE

INGREDIENTS:

For Chicken Steak:
- Chicken breast fillet: 2 large pieces, hammered to 1/2 inch
- Black pepper, crushed: 1 tsp
- Garlic powder: 1 tsp
- Salt: 1/2 tsp
- Paprika powder: 1 tsp
- Worcestershire sauce: 1 tbsp
- Oil/Butter: 2 tbsp for grilling

For Mushroom Sauce:
- Butter: 2 tbsp
- Garlic, minced: 2 cloves
- Mushrooms, sliced: 1.5 cups
- Flour: 1 tbsp
- Milk: 3/4 cup
- Cream: 1/2 cup
- Soy sauce: 1 tsp
- Black pepper, crushed: 1 tsp
- Salt: 1/2 tsp
- Oregano: 1/2 tsp

Sides: French fries, sautéed veggies, or mashed potatoes

INSTRUCTIONS:

1. MARINATE & GRILL CHICKEN
- Chicken fillets ko hammer se flat karo.
- Salt, black pepper, garlic powder, paprika, Worcestershire sauce laga ke 20 mins marinate karo.
- Grill pan me oil + butter garam karo. Chicken 4-5 mins har side se golden hone tak pakao. Side pe rakh do.

2. MAKE MUSHROOM SAUCE
- Usi pan me butter dalo. Garlic 30 sec sauté karo.
- Sliced mushrooms add karo. 4-5 mins pakao jab tak golden ho jayen.
- Flour sprinkle karo aur 1 min bhuno.
- Slowly milk add karo, continuously stir karo.
- Cream, soy sauce, black pepper, oregano, salt dalo.
- 2-3 mins simmer karo jab tak sauce thick ho jaye.

3. PLATING
- Grilled chicken steak plate me rakho.
- Upar se garam mushroom sauce pour karo.
- Fries aur sautéed veggies ke saath serve karo.

TIPS:
- Extra juicy chicken ke liye: fillets ko 15 mins salt water me brine karo.
- Zinger Style: Sauce me 2 tbsp Zinger burger sauce mix kar do for tangy kick.
- Cheese Lover: Chicken pe cheese slice rakho, phir sauce dalo.

Ready in 30 mins! Perfect for dinner.
