Famous highway cuisine

Ingredients

BEEF boiled pieces 1kg
Green chillies 20-25 depends
Salt to taste
Ghee ( clarified butter) 1 cup
Lemon juice 2tbsp
Coriander leaves 2tbsp
Julian ginger as req

Karahi Masala

Crushed roasted coriander 1tbsp
Roasted Crushed red chilli flakes 1tsp
Crushed roasted cumin 1tbsp
Dry fenugreek leaves ( qasoori methi) 1tsp
Chat masala 1tbsp
Khatai powder 1tsp ( raw mango powder)
Black salt 1/2tsp
black pepper crushed 1tsp
Garam masala powder 1/2tsp
Mix all to gather and store in airtight jar

Method

Heat clarified butter or oil add boiled BEEF , chopped ginger garlic 2tbsp and fry till nicely golden now add green chillies and fry them

sprinkle 4-5tbsp masalA along with lemon juice toss and mix.

Balochi tikka karahi or madinah hotel's balochi tikka karahi is ready. Serve with roghni naan nd jungli raita.

Beef yakhni Pulao.
Ingredients Of Yakhni Pulao

1/2 kg beef with bones (preferably b**g nd kareli)
1/2 kg rice, washed and soaked basmati
1/2 cup ghee

For yakhni

2 tbsp fennel seeds (sonf) will use 1-1/2tbsp in yakhni nd 1/2tsp as powder in gravy
1-1/2 tbsp coriander seeds
1 medium onion, for yakhni nd 1 cup fried onion on dum
Salt to taste
Whole all spices as required (big and small cardamoms, cloves, cinnamon stick, whole black pepper, cumin seeds)
Green chillies 3-4
Ginger 1 small
1bay leaf t**z patta
Star anise 4
6-8cups water

Put all together with meat nd cook for 3hour until meat get tender.

Now take out meat from yakhni nd strain the yakhni. Keep aside

For gravy masala

Yogurt 1cup
Mint leaves 1cup
Ginger garlic paste 2tbsp
Black pepper 1tsp
Salt to taste
Jaifal jawatri 1/4tsp
Corriandar seeds 1tsp
Green Cardamoms 1/4tsp
Kala zeera black cumin 1/2tsp
Fennel seed powder 1/2tsp
Dried plum 7-8
Green chilli paste 1tbsp

Heat ghee in pot add black cumin nd cooked meat and fry well now add ginger garlic paste green chilli paste nd bhunofy now add yogurt fennel powder black pepper salt plums nd bhunofy.
Add prepared yakhni according to your rice. Bring it to boil
Now add soaked rice in it and mix it and cook it till the rice are 3/4 cooked and water is dried add fried onion nd mint . Now put a lid on it and put it on dum for 10-15 minutes on very low flame

Mutton/beef boneless

Vinegar 2tbsp
Soy sauce 2tbsp
Cumin powder 1tsp
Water 2 glasses

French fries to garnish
Onion slices to garnish
Lemon juice .
Chaat masala to sprinkle on top
