The cultural project "De Gustibus: The Roman cuisine and culinary customs in ancient Apulum" attempted to offer a unique experience of time travel by reconstructing an important aspect of everyday life in ancient communities: the cuisine. It was organized by the National Museum of Union Alba Iulia (Romania) in partnership with the Institute of Systemic Archaeology of the 1 Decembrie 1918 Universi
ty from Alba Iulia. The project was funded by the Administration of National Cultural Fund. In November 2013 it was lunched the event called Taberna De Gustibus as part of the project. In the exhibition area were reconstituted a Roman kitchen (culina) and a space for serving meals in a taberna (caupona). The Roman tavern was equipped with specific wooden furniture, cooking facility - Roman oven (furnum) and several replicas of Roman pottery (amphorae, pots, jugs, cups, bowls, plates). We also displayed authentic Roman pottery found during excavations in the ancient site of Apulum (nowdays Alba Iulia) along with numerous explanatory panels on nutrition and culinary habits in the Roman world. Apulum was the largest city in Roman Dacia and was the seat of the Legion XIIIth Gemina. Apulum was not only the largest conurbation in province Dacia, but also an important military, cultural and political center. Apulum was a flourishing urban center in the 2nd and 3rd centuries A.D.Being about Apulum as a part of the Roman world, our event managed to raise the interest and curiosity of those who have crossed the threshold of Taberna - approximately 300 participants were participating at the interactive historical reenactment event. The visitors had the opportunity to taste the delicious dishes and wines in a unique and spectacular ambiance unique animated by music, dance, Roman soldiers, gladiators, waitresses and slaves. Viewed from this perspective, the cultural project De Gustibus: The Roman cuisine and culinary customs in ancient Apulum was also a manifestation of experimental archaeology and reenactment. Taberna was the space where we served Roman foods and drinks after Roman recipes kept in the treaty De Re Coquinaria by Marcus Gavius Apicius. He was a great lover of luxury and refined tastes, a perfect hedonist... He lived in the first century A.D., during the reign of Tiberius and being particularly rich. Although he acquired a bad reputation especially among the Stoics and Christians, he was admired and imitated by eccentric emperors like Elagabalus. Apicius has become famous for his sauces and he invented recipes bearing his name, setting the first culinary canon in the Roman cuisine and being inspired by the works of his Greek and Roman predecessors. The cookbook De Re Coquinaria in its current form dates back to 5th century A.D., and it is a compilation that includes recipes of Apicius, manuscripts kept in the first edition appeared in successive stages plus various recipes of others like Vinidarius.Recreating the atmosphere of a genuine Roman convivium, the event Taberna De Gustibus had a particular character and a unique way of addressing to the public and making known an important aspect of everyday life in the Roman world - gastronomy and culinary habits. Proiectul cultural De Gustibus: Bucătăria romană şi obiceiurile culinare în Apulum-ul antic a încercat să ofere publicului experienţa inedită a unei călătorii în timp, raportându-se direct la preocuparile tot mai insistente ale istoricilor de a reconstitui aspecte din viaţa de zi cu zi a comunităţilor antice. Organizat de Muzeul Naţional al Unirii din Alba Iulia în parteneriat cu Institutul de Arheologie Sistemică Iuliu Paul din cadrul Universității 1 Decembrie 1918 Alba Iulia şi finanţat de Administraţia Fondului Cultural Naţional, proiectul a lansat în luna noiembrie a anului 2013 evenimentul Taberna De Gustibus. În spaţiul expoziţional al Palatului Apor a fost reconstituit cadrul domestic al unei bucătării romane (culina) şi spațiul destinat servirii mesei într-o taberna de tip caupona. Interiorul tabernei romane a fost utilat cu mobilier specific din lemn, instalație de gătit - cuptor (furnum) şi replici după ceramica romană de uz casnic (amfore, oale, ulcioare, căni, pahare, castroane, platouri). Vesela autentică din ceramică descoperită în situl arheologic Apulum a fost prezentată publicului în sălile adiacente, alături de numeroase panouri explicative privind alimentaţia şi obiceiurile culinare specifice lumii romane. Taberna a fost spaţiul unde s-au servit mâncărurile şi băuturile reconstituite după reţetele romane păstrate în tratatul De Re Coquinaria. Vizitatorii au avut ocazia să deguste savuroasele bucate şi vinuri romane într-o ambianţă inedită şi spectaculoasă animată de muzică, dans, soldaţi romani, gladiatori, chelneriţe, sclavi şi chiar de însuşi Apicius - gazda şi sufletul cinei festive ale cărei bucate au fost inspirate de reţetele sale. Evenimentul a reuşit să suscite interesul şi curiozitatea celor care au trecut pragul tabernei, cei aproximativ 300 de participanţi la vernisaj participând interactiv la actul de reenactment istoric. Privit din această perspectivă, proiectul cultural De Gustibus: Bucătăria romană și obiceiurile culinare în Apulum-ul antic se încadrează prin manifestările sale în curentul activităților de arheologie experimentală. Reconstituind atmosfera unui veritabil convivium roman, evenimentul a avut un caracter particular şi inedit prin maniera de adresare şi deschidere spre public făcând cunoscut un aspect important din viaţa cotidiană romană - gastronomia şi obiceiurile culinare. Proiectul se doreşte a fi o pledoarie pentru cunoaşterea dar și pentru promovarea unui modus vivendi pe cât de vechi pe atât de sănătos care își găsește un puternic ecou în preocupările actuale de încurajare şi stimulare a populației în direcția unui mod de alimentație natural şi sănătos.
