I need to post this tonight or it won’t happen again....
I had saved the posts for this recipe twice, but some technical glitches had caused them to disappear, hence losing the better looking pictures which I took late last year...
This Dates and Coffee Loaf has recently been my favourite cake... the combination of dates, coffee and brown sugar gives it a toffee-like flavour, almost making it difficult to guess there are dates added... I’m also loving the very moist texture... wonder if it’s from the dates..
So far, I’ve tried only using honey dates from Iran instead of Medjol dates as recommended in the original recipe and hence reduced the sugar used in the recipe. Even then, the sweetness of the cake varied with different brands of Iranian dates that I used.
