The fourth panel provided a deep dive into the Food & Beverage (F&B) supply chain, for the Responsible Travel Meets Green Design: Speaker Series—an official partner event of the inaugural hashtag , hosted by Fenn Designers & 137 Pillars Suites & Residences Bangkok.

By showcasing innovative solutions and partnerships that allow hotels and restaurants to achieve the gold standard of sustainability: zero waste to landfill.

This session was highly actionable, focusing on operational tools and conscious sourcing. Our panel featured pioneering entrepreneurs and industry standards experts with our host-in-chief Sanjog Modgil:

1.Redefining Waste Management: The goal is to move past recycling to "Refuse, Reduce, Reuse," with a heavy focus on eliminating single-use plastics and implementing systems like converting food waste into valuable resources (e.g., biogas, animal feed).

2.Strategic Partnerships: Hotels must foster long-term collaborations with suppliers

3.Data and Visibility: Information sharing (like real-time demand and shelf-life data) is crucial to solving the massive issue of food waste before it happens.

This spotlight is part of the Responsible Travel Meets Green Design: Speaker Series—an official partner (Fenn Designers & 137 Pillars Bangkok). Our focus is on "Embedding Sustainable Operations into Boutique Luxury Design," balancing heritage preservation with modern luxury.

Nida Wongphanlert, Managing Owner of 137 Pillars Bangkok, provided the essential owner-operator view: without commitment from the top, green designs remain blueprints.

Her philosophy, "Redefining Luxury through Conscious Choices," is captured in her quote: "We redefine luxury through a commitment to sustainability... true opulence lies in conscious choices. We strive to blend indulgence with responsibility, shaping a sustainable future for hospitality."

This strategy embeds Environmental, Social, and Local Procurement principles into luxury operations, committing to:

Lydia is the Design Director & Chief Sustainability Officer at Fenn Designers and also leads Green Path Consulting, specializing in sustainable design and hospitality. Her focus is on "Designing Sustainability from the Ground Up" in the built environment.

The "Blueprint"
The Blueprint" philosophy is centered on embedding sustainability into a hotel project's core infrastructure and strategy to guarantee scalability and resilience.

Key Design Pillars:
