Hubs is on a big jalapeño margarita kick, so we seem to have a ton of jalapeños around the house so you know we had to make us some poppers! 😋

These are stuffed with cream cheese, ranch, shredded cheddar and bacon bits. Air fryer for 15 minutes at 375.

Oh and I deseeded and blanched the peppers before stuffing. Because Im a sissy and can’t handle too much heat.

This simple little dish came across my reels and since I had all the ingredients on hand, I went for it!

Baked potato bar! 🥔
All ya need is some foil, oil and salt, then let your crockpot do the rest! I cooked these on low for about 6 hrs. They cooked perfectly and the oil allowed for a crispy skin on the outside. We had chili, cheese, green onions and greek yogurt to top it with. We SHOULD have had bacon bits, but I couldn’t find them in the camper. As we packed up this morning, they were found in Ryders bed. 😠. Ugh

Kinda. I received some seasonings from a colleague so I could expand my palate a bit.

It was tasty and the family loved it.

Chicken, veggies and used up some leftover white rice from Sundays Chinese carryout. (See, I eat internationally sometimes 😉)
