Slow Cooker Summer Vegetable & Lemon Chicken Soup
This light, bright soup is perfect for hot weather because it's packed with fresh vegetables and citrus flavor instead of heavy cream or rich ingredients.
Ingredients
1 lb boneless, skinless chicken breasts
4 cups low-sodium chicken broth
2 zucchini, sliced
2 carrots, sliced thin
2 celery stalks, chopped
1 small onion, diced
3 cloves garlic, minced
1 can (14.5 oz) diced tomatoes, drained
1 tsp Italian seasoning
½ tsp salt
½ tsp black pepper
Juice of 2 lemons
2 tbsp fresh parsley, chopped
2 tbsp fresh dill (optional)
Instructions
Place chicken, broth, zucchini, carrots, celery, onion, garlic, tomatoes, Italian seasoning, salt, and pepper into the slow cooker.
Cover and cook:
LOW: 6-7 hours
HIGH: 3-4 hours
Remove chicken and shred with two forks.
Return chicken to the slow cooker.
Stir in lemon juice, parsley, and dill.
Let sit for 10 minutes before serving.

Green beans
Corn kernels
White beans
Orzo pasta (cook separately and add before serving)

Serve chilled slightly or at room temperature with a crisp cucumber salad and fresh fruit for a refreshing summer meal.
