Fig and Goat Cheese Pinwheels

Servings: 8 pinwheels
Ingredients
π₯ 1 sheet puff pastry, thawed
π§ 4 oz goat cheese, softened
π― 3 tbsp fig jam
πΏ 1 tsp fresh thyme leaves (or Β½ tsp dried)
π§ Pinch of salt
π§ 1 tbsp butter, melted (for brushing)
π° Optional: 2 tbsp chopped walnuts or pecans for added crunch
Instructions
Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.
Roll out the puff pastry on a lightly floured surface into a rectangle.
Spread the goat cheese evenly over the pastry, leaving a Β½-inch border on all sides.
Spoon the fig jam over the cheese and gently spread.
Sprinkle thyme leaves, salt, and optional nuts over the filling.
Roll up the puff pastry tightly from one long side to the other, like a jelly roll.
Slice into 1-inch pinwheels and place them cut-side up on the baking sheet.
Brush the tops lightly with melted butter.
Bake for 12β15 minutes, or until golden brown and puffed.
Cool slightly before serving warm or at room temperature.
