Ahi Tuna Nicoise: such a satisfying dinner salad! Brown rice, quinoa, roasted potato, egg, tomato, green beans, arugula, avocado, pickled onion, hot pepper relish, and ahi prepared style.

The sushi grade ahi from The Cove Fish Market is tossed in a little soy sauce, rice vinegar, sesame oil, lime, chives and sesame seeds.

Fried Chesapeake oysters 🦪 over creamed spinach. The True Chesapeake ‘Chunky Dunkers’ are like the size of my hand, so it was only right to use them as a serving vessel!

Think a hot vibe topped with a perfectly fried oyster— crispy and light to let the oyster shine.

Dusted in cornmeal and a little flour seasoned with Cajun salt, and paprika. Parmesan and a little panko atop the spinach. Such a good bite!

HEALTHYISH — I love a whole fish that is crispy outside and moist inside! Roasted this branzino simply with lime and Za'atar. (A friend of mine sent me the Za'atar from Cairo = super fragrant!) Low broil for 5-6 minutes— just until the skin crisps and chars, then an additional 10 minutes at 400 degrees. Served with stir fried bok choy and a little brown rice. The Za'atar is brilliant on fish!

HEALTHYISH — Jerk chicken kabobs with a mango relish, spinach and red cabbage salad with quick-pickled onion, kalamata olive (dressed simply in olive oil and lemon) + roasted sweet potatoes tossed in Za’atar.
Quick and lean weeknight meal idea to work with your fitness goals but still give FLAVOR!

I used chicken breast for the kabobs in an effort to be obedient to my current fitness plan.

Only ate half of this and am super satisfied!

PS: The used was shipped from Cairo from a good friend of mine. So far, I’m loving it on sweet potatoes and salad!
