You may be asking yourself… how do you elevate a street taco that’s already elite?

We start with fresh corn tortillas and pile them high with savory, melt-in-your-mouth smoked brisket that’s packed with flavor in every bite.

Not a brisket person? We’ve also got a flavor-loaded pulled pork version that hits just as hard. 👊

Update on the last fundraiser we did for Emmanuel Santiago López dad's knee surgery! As you guys know we were able to push the funds over the top with all your generosity. He had the surgery almost 2 weeks ago and is doing great. Keep them all in your prayers for a speedy recovery. I will post a video in the comments of him getting to walk a little shortly after surgery!

Meal Plan Monday

It has been a busy couple of weeks. Even though we had company last week, I didn't have to cook dinner much and so I didn't make a meal plan. We are back to our normal routine this week. Not any less busy though, so a meal plan is needed.

Here's what's on the menu this week:

Ham and potato casserole
Eggroll in a bowl

Meatloaf and mashed potatoes

Fundraiser update!!!!

Man did you guys come through and big! I want to thank all of you who purchased and/or donated at the pulled pork fundraiser. I know Emmanuel Santiago López and his family are beyond grateful. You all are amazing! We hit and surpassed the goal with the purchases and donations. What you all have helped do will change Emmanuel's dad's life.

Meal planning is an important part of my week. It takes a little work, but it helps the rest of the week go smoother when I have a list of meals to choose from, and I know I have the ingredients to make them.

That said, last week I could not for the life of me get a meal plan put together. I thought of a couple meals I could make, but when I was going over my list of meals and recipes, it felt like we had just had all of them recently. Which was most likely not true.

This is why I keep a basic stock of ingredients on hand though. In my pantry, fridge and freezer, I always have things like pasta, tortillas, chicken broth, milk, bread, chicken, ground beef, different sauces and spices, and veggies. I can make a few different meals in a pinch if I need to.

And you know what? Even though I didn't have a meal plan last week, we were still fed. I made the couple meals that I had in mind and scrounged up others with the ingredients I had on hand.

We even had company stay with us this weekend. They brought a few frozen pizzas that we cooked up. We figured out food for the other nights. Yesterday my boys had a few friends over after church. We cooked a couple of the frozen pizzas we still had left and some chicken nuggets. And the boys loved it. It just goes to show that you can feed 6 hungry boys without having a plan or going to a restaurant.

While that was all fun and I'm glad we were fed last week, I don't really want to repeat that this week. 😅 So I made a meal plan.

One pan beef and potatoes
