Good info!

With Spring approaching and baby chick commercials going to be popping up, remember to think carefully if you're interested in raising chickens for eggs... it's a bigger commitment than just a coop.....

Someone asked me for this recipe, so I wanted to share it here. Hope you enjoy!

SNOW CREAM RECIPE
Ingredients:
8 cups fresh, clean snow
1 cup heavy cream (or milk for a lighter version)
1/2 cup sugar or maple syrup
1 tsp vanilla extract
A pinch of salt

Instructions:
Collect Snow: Gather 8 cups of clean, fresh snow. Make sure it’s from a safe, clean area, free from dirt or contaminants.
Make the Base: In a bowl, mix the heavy cream, sugar, vanilla extract, and a pinch of salt if using. Stir until the sugar dissolves and the mixture is well combined.

Combine Snow and Mixture: Slowly pour the cream mixture over the snow, stirring gently as you go. You want the consistency to be thick and creamy, so add just enough mixture to achieve that texture. You might not need to use all the liquid.

Serve Immediately: Scoop into bowls and serve right away. You can top with chocolate chips, sprinkles, or fruit for extra fun!

Tips:
If you prefer a lighter snow cream, you can substitute the heavy cream with milk.

Feel free to adjust the sweetness to your taste by adding more or less sugar and you can substitute refined sugar with maple syrup.

Last tip: don’t eat yellow snow!

Because the ketchup recipe was appreciated, here’s one for mayo with no seed oils

Healthy Avocado Mayonnaise

1 egg
2 teaspoons lemon juice
1/2 teaspoon salt
1/2 teaspoon mustard
1 cup avocado oil

Add 1 egg, 2 teaspoons of lemon juice, 1/2 teaspoon of mustard, 1/2 teaspoon of salt to a wide mouth mason jar.

Next, take an immersion blender and beginning at the bottom of the jar and slowly add the oil. If you go too fast it will cause the two to split instead of mixing.

Continue blending until it is fully mixed, about 1-2 additional minutes.

KETCHUP

INGREDIENTS:
• 2 Cups Strained/Crushed Tomatoes
• ½ Cup Vinegar
• ¼ Cup Maple Syrup (or honey)
• 1 Tsp Sugar
• 1 Tsp Salt
• 1 Tsp Garlic Powder
• 1 Tsp Onion Powder

INSTRUCTIONS:
1. In a medium saucepan, combine 2 cups tomato puree, ½ cup vinegar, ¼ cup maple syrup, 1 tsp sugar, 1 tsp salt, 1 tsp garlic powder, and 1 tsp onion powder. Whisk until well combined.

2. Bring the mixture to a gentle simmer over medium heat, then reduce heat slightly to maintain a steady, low bubble. Simmer uncovered for 15 to 20 minutes, stirring occasionally to prevent sticking, until the ketchup has thickened to your desired consistency and coats the back of a spoon.

3. Remove from heat and transfer the ketchup to a clean jar or airtight container. Allow it to cool to room temperature, then refrigerate for at least 1 hour before using to let the flavors meld and the ketchup thicken further.

Your tiny pollinator garden might be the only stop for a migrating butterfly across 20 miles of sterile lawn.
That’s not small. That’s life-changing.
