So good y’all. Pulled pork on onion buns, with garlic aioli. Macaroni salad and onion rings.
For the pulled pork, I slit holes in pork added whole garlic cloves. Seasoned with a fajita rub or whatever rub you like. I browned in my pressure cooker on browning function. I added 1/2 of a large onion, and 1 c orange juice and 1 cup of water on high pressure 75 minutes.
For the aioli,
I added 1/2 c dukes, 1 T lemon juice 1 garlic clove minced s and p to taste.
For the macaroni salad:
I cooked 2 c noodles, drained and cooled.
I added onion to taste and 1 celery stalk minced. For the dressing, I did 1/2 c mayo, 1/2 c sour cream, 1/2 t salt, 1/4 t pepper, 1/2-1 t celery seed. Mixed everything then put in fridge until ready to eat.

Today I made okra soup, with rice and cornbread with butter, so good.
For the soup:
1/2 onion, chopped
Sm bag of frozen okra fresh would be awesome here
28 oz whole tomatoes broken apart
2 c beef broth ( chicken is ok)
1/2 t dried thyme
1 bay leaf
1 t garlic powder
1 t onion powder
2 T flour
S and p to taste
Paprika to taste
I sautéed onion in 2 T bacon grease and 1T butter, added flour cooked 1 minute.
Added salt, thyme, okra, tomatoes, and the rest of ingredients. Simmered 30 minutes. Taste. Adjust seasonings.

Certainly not the weather for it. But it only takes about 30 minutes.
Potato soup:
3 lg russet potatoes
1 stalk of celery with leaves
1/2 of onion, chopped
1 T chicken bouillon
1 t garlic powder
1 t salt
1/2 t pepper
Enough water to cover.
Boil until soft.
Add 3 T butter
A splash of milk.

Ladle in bowls top with bacon bits, sour cream and cheese.
Yummy

B**r sausages, mac n cheese, fresh green beans. So good, I hope y’all try it.
For the sausages:
I sautéed onion and garlic in a tad of oil. I added a pinch of dried thyme.
I pricked the sausages and added to the pan. I added a lite b**r and cooked 30 minutes with lid on, then I removed lid, and allowed liquid to almost absorb all the way.
For Mac n cheese. I boiled 1 1/2 cups of noodles in very salted water for about 12 minutes. Drained. For cheese sauce: I added 1 T butter, 1 T flour, salt, pepper to taste. Added about 1/2 t dried mustard. Slowly added about 1/2-3/4 c of milk. Then I added cheese. I used whatever cheese I had. Mix until melted. Added to sprayed dish. Topped with a little cheese. Baked 375 for 20 minutes.
For green beans:
Fresh green beans
1 small onion, chopped
1 T bacon grease
1 garlic clove, minced
1 T chicken bouillon
1/2 c water
Pinch of brown sugar
Sauté onion and garlic in bacon grease. Add fresh green beans. Stir. Add bouillon, water and brown sugar. Add lid boil 20 minutes then I took off lid and cooked until liquid is absorbed. They are not crunchy. If you like crunchy, adjust the time.

Beef n noodles, fried green tomatoes, onion, yellow squash and zucchini, tomatoes and cucumber. So good y’all

I’m sure everyone makes their own version of this. Great way to use up leftover chili. I made Mac n cheese with just shell noodles, cooked added butter and velvetta. Mixed in chili heated thru them topped with shredded cheese. With cornbread, and pickled jalapeños. So good

This was so good, y’all. Bbq grilled chicken, potato salad, pinto beans, fresh tomatoes.
For the chicken I marinaded the night before, then grilled at 350 on pellet grill took about 22 minutes. Cooked until internal temp was 165. For the marinade, I mixed
2 T olive oil
1 T apple c***r vinegar
1 T chili powder
1 t onion powder
1 t garlic powder
1 t cumin
1/2 t pepper
1 t salt
Mixed together, pour over chicken in ziplock

So very good. Beef tips n noodles, potato patty, broccoli. For beef tips:
2 lbs of meat( I had a small steak and bottom round in my freezer
1 onion sliced
1/4 c soy sauce
1/4 c w sauce
1 packet of brown gravy
1 1/2 c water
I cut the meat in big chunks, seasoned with adobo seasoning. I browned in a little oil. I used my pressure cooker, you can use crock pot or stove top. After browned add onions. Sauté a few minutes, then add the rest of ingredients and pressure cooked 30 minutes. Meat was fall apart tender. While I was waiting for the natural release, I boiled noodles in salted water, then drained. And added butter.
For potato patty’s, I had leftover mashed potatoes,
I added a 1/2 of a beaten egg. 1/4 c or so of onions, 1/4 c self rising flour mixed good. Fried in a little olive oil with butter. I didn’t have much potatoes. You can adjust everything to the amount of your potatoes.
