Friday Eve Cocktail Hour

HIBISCUS GIN & TONIC

Here's a tropical twist for you Gin & Tonic fans. I got the hibiscus syrup at Total Wine, but you can order it online from many sources. Hibiscus flavors for cocktails are quite popular.

2 oz gin
1 oz hibiscus syrup5 oz Elderflower liqueur
2 oz or more of tonic water

This is a simple cocktail you can build in a tall glass.
Add the gin, syrup, and elderflower and give it a good stir. As my friend John Miller would say, "Stir, don't shake, so as not to bruise the gin". We wouldn't want bruised gin, now would we? (He cracks me up.)
Add ice, and top with as much tonic water as you like.
This is not sweet, but a refreshing summer drink.

EASY BLUEBERRY SPARKLER

I hope you've enjoyed these easy summer cocktails. I'll get back to fancy, but this has been fun. Here's one that will knock your socks off if you like blueberries. Similar to a mimosa or bellini, this one uses blueberry puree for the fruit flavor.

1 oz blueberry puree*
4 oz prosecco or champagne

Put the blueberry puree in the bottom of a champagne flute. Add 2 oz of prosecco and stir well. Top with another 2 oz.

*This blueberry puree is so good you'll want to put it on pancakes or drizzle it on ice cream or put it in your tea, your lemonade, or other cocktails. It is fabulous. As with all the purees, you can get them at a liquor store, some grocery stores, and of course, online.

EASY PALOMA

2 oz tequila silver or reposado
4 oz Sq**rt (grapefruit) soda

In a highball glass full of ice, pour in the tequila, then top with the soda, and give it a gentle stir. Serve with a lime wedge.
This is NOT a sweet drink, but if you like grapefruit, you'll love it.
I liked the reposado better than the clear tequila.
If you squeeze a little fresh lime in, it’s great.
A tajin rim (pronounced TAH-HEEN) would be nice on this one if you want to do that....or half salt and half tajin would be even better.

EASY PEACH FROSE'

The second in the series of stupid easy summer cocktails uses what I refer to as pink wussy wine (Pink Moscato or White Zinfandel) which is anything sweet and pink. I must confess that I used to drink this by the box, back in the day. Don't judge. Be sure and read the notes at the end.

In a blender, put
1.5 cups frozen sliced peaches*
2/3 cup pink moscato or any pink sweet wine
Blend till a smooth puree.
Pour into a large wine glass.
Notes: I wanted mine even a little bit sweeter, so I added a tablespoon of honey and it was perfect.
If you want to make a pitcher of this stuff, use
1 (16oz) package of frozen sliced peaches
1 bottle of pink moscato and 1/3 cup honey if you want it sweet. For those who don’t want sweet at ALL - use a nice dry Rose’. This also works great with strawberries, blackberries, or mango. Such a versatile and simple summer smoothie.
Easy peasy.

EASY NUTELLA COCKTAIL

This is the first of four in a series of “stupid easy” summer cocktails using only two ingredients. Your read that right. Two. This one has gone viral on social media so we had to try it, and now it's my husband's new obsession.

2 TBSP Nutella
2 oz vodka

Put in a shaker and dry shake (without ice) for about 30 seconds. Add ice and shake again for a full minute. You want the ice to fully chill the drink but also melt a bit.
Dump the whole thing, ice and all, into a rocks glass and enjoy. As Tommy says, "this is as good as it gets!"

4th of July Edition - early due to travel

NEW ENGLAND ICED TEA

Here's a play on Long Island Iced Tea for the holiday - perfect for a clambake on the beach in New England, or a pool party in the south, or Independence Day parties anywhere. Careful....this one is strong because you are using all five of the clear liquors!

1 oz vodka
1 oz light rum
1 oz silver tequila
1 oz gin
1 oz triple sec
1 oz lime juice
1.5 oz simple syrup*
2 oz cranberry juice

Put everything in a cocktail shaker, fill with ice, and shake until well chilled. Strain into an iced tea glass filled with ice.
* I used pure cranberry juice, not cranberry juice cocktail (which has sweeteners), so this is not a sweet drink. My husband wanted an extra half ounce of simple syrup (total 2 oz) to make it sweeter. It's good either way. Just make it according to your personal taste.

Friday Eve Cocktail Hour

GUAVA MARTINI

Here's another one that tastes like a tropical vacation in a glass.

2 oz vodka
2 oz coconut water
1 oz Re'al Guava puree5 oz simple syrup
1 oz club soda to top off
lime slice for garnish

Put the vodka, coconut water, guava puree, and simple syrup in a shaker. Fill with ice and shake vigorously for a minute until well chilled. Strain into a martini glass and top with about an ounce of club soda (or Topo Chico). Garnish with a lime slice.
NOTE: The coconut water does NOT give it a coconut taste. (I'm talking to you, Susan....) It dilutes the guava puree without losing any of the guava flavor. Notice that I am using another puree this week. These are so easy to add to any drinks (alcoholic or non-alcoholic ) for a real punch of fruit flavor. You could use guava juice, but it's not going to be the same. You can find these at liquor stores, online, and some grocery stores.

Friday Eve Cocktail Hour

Try this easy and versatile summer cocktail this weekend! You may already have all the ingredients on hand. Pay attention to the NOTE below if you don't like one of the ingredients.

1 oz light rum
1 oz Malibu Coconut rum
1 oz amaretto
2 oz fresh squeezed orange juice (tangerine or mandarin juice is even better!)
2 oz pineapple juice

Put all in a shaker with ice and shake until well chilled. Pour over new ice in an iced tea glass and garnish with an orange slice and cherry.

NOTE: If you don't like Malibu coconut rum, leave it out, or substitute it with another Malibu flavored rums. They have pineapple, peach, mango, passion fruit, and strawberry. If you don't like Amaretto, leave it out, but you may want to add a little simple syrup since the Amaretto is the sweetener. You can always double one of the liquors to make it stronger. You could use spiced rum instead of light rum - or both. The whole idea is rums + fruit juices + sweet, so play with it and make it according to your tastes. The ratio is 3 oz liquor to 4 oz juice. Once you get it the way you want it, you just might want to make a pitcher of these babies. It's great for hot summer days.

Friday Eve Cocktail Hour

PASSION FRUIT MARTINI

I just returned from Mexico and lost my mind over the tropical fruit cocktails. This vibrant drink blends sweet passion fruit with a hint of vanilla and the zing of lime and prosecco. It's simply irresistible....a little vacation in a glass.

2 oz vanilla vodka
1 oz passion fruit liqueur like Chinola
3 oz passion fruit puree5 oz fresh lime juice5 oz simple syrup
1 -2 oz prosecco or champagne to top it off

In a cocktail shaker add the vodka, liqueur, puree, lime, and simple syrup. Shake well. Add ice and shake again very well to chill thoroughly. Strain into a martini glass and top with prosecco or champagne to taste. The sparkling wine really lightens it up and keeps it from being too sweet. Garnish with a slice of lime.
Note about purees: Several of these can be found in grocery stores in the mixers section, but at liquor stores they have a bigger variety. You can also get them on Amazon.
Other uses for passion fruit liqueur - drink it chilled over ice. Put it in iced tea or lemonade or 7Up. Put it in a margarita or mimosa. Cheers!

PINEAPPLE & POMEGRANATE PARTY PUNCH

This was a signature cocktail for a friend's 60th birthday and the mocktail is every bit as delicious as the cocktail, so see the notes below.

2 oz vodka
2 oz pineapple juice
1 oz pomegranate juice
1 oz simple syrup5 oz lime5 grenadine
club soda to top

Combine the vodka, juices, syrup, lime & grenadine in a cocktail shaker. Fill with ice and shake well. Pour into a tall glass with fresh ice and top with club soda or Italian sparkling mineral water. If you don’t like pomegranate, you can make this with guava or passionfruit, as well.
For a great mocktail, omit the vodka and replace it with more club soda or mineral water, but only add that at the end. Do not put it in the shaker or it will blow the top off while you are shaking it. I speak from experience....HA!
