Friday Eve Eve Cocktail Hour (early this week)

MANGO MELTDOWN

My friend Jo Anne came back from vacation raving about this on Norwegian Cruise Lines, so I had to try them for myself. Oh, MY! They are delicious! It's like a mango smoothie with a strawberry swirl - with booze. What's not to love?

1 oz Re'al Strawberry puree
4 oz Re'al Mango puree
1. 5 oz Anejo Rum or any strong caramel colored rum5 oz Amaretto liqueur

Put the ounce of strawberry puree in the bottom of a glass. Put the mango puree, rum, and amaretto in a blender and add ice. I put in a cup and blended, then added more until it had the consistency of a thick smoothie. Pour slowly into the glass and swirl so the strawberry gets layered. I took a long spoon and swirled it around even more.
It's so pretty it doesn't even need a garnish!

STRAWBERRY LONG ISLAND ICED TEA

Strap on your seat belt. You are in for a ride. A Long Island Iced Tea isn't iced tea at all. It's a potent blend of the five clear liquors: vodka, tequila, gin, rum, and triple sec usually with orange juice and a dash of Coke to give it that iced tea color. THIS beauty uses Strawberry puree (found with the mixers, right by cream of coconut and mango puree) and it is so smooth, it's downright scary.
5 oz vodka5 oz tequila5 oz rum5 oz gin5 oz triple sec
1 oz simple syrup5 oz fresh lemon juice
1 oz Re'al Strawberry puree

Fill a shaker full of ice. Add all ingredients and shake well. Strain into a Tom Collins glass full of fresh ice. Garnish with a strawberry and a sprig of mint or a lemon slice.

STEVEN'S ORANGE MULE

My brother Steven makes a great Kentucky Mule. It's a simple drink: a squeeze of lime, Kentucky Bourbon, and ginger beer, most often served in a copper mug. When he made me an Orange Mule, made with Jameson Orange, I lost my mind. So simple and so refreshing, this could be an easy go-to drink for warm weather.

Lime wedge
2 oz Jameson Orange*
4 oz Bundaberg ginger beer

Fill a mule mug or an Old Fashioned glass full of ice. Squeeze the lime over the ice, then put the squeezed lime belly up and pour the whiskey over it first, then the ginger beer. Stir while adding the ginger beer. It's as easy as that!

*Jameson Orange is a flavored Irish whiskey combining triple-distilled Jameson with natural orange flavoring and is both zesty and smooth. You can also serve it over ice, in lemonade, or in iced tea.

EASTER BUNNY MARTINI

Here's a smooth and rich Easter cocktail made with chocolate milk and whipped cream flavored vodka that's sure to delight the adults while the kids are hunting for eggs.

2 oz chocolate milk
2 oz Pinnacle Whipped Vodka*
1 oz Irish Cream liqueur
1 oz chocolate liqueur
chocolate bunny to garnish

I got the chocolate bunny to perch on the rim of a martini glass by heating up the blade of a knife, then making a little slice by melting it at the bottom of the bunny and propping him up there while it was still a little soft. It hardens back up immediately when you pour in the cold liquid.

Put the milk, liquor, and liqueurs in a shaker full of ice. *You can substitute vanilla vodka for whipped vodka, if you like. Shake well for at least 30 seconds. You want this very cold. Strain into the martini glass and serve immediately.

DIRTY MONKEY

Go bananas with this great tropical smoothie combining banana and chocolate in the best possible way.

1 very ripe banana
2 oz rum5 oz Kahlua5 oz banana liqueur5 oz creme de cacao*
chocolate syrup

Drizzle chocolate syrup on the inside of a glass and put it in the freezer. Slice the banana - the riper, the better, and add to the blender with the liquor and liqueurs. *You can substitute any chocolate liqueur for the creme de cacao. Note: I've made this with banana liqueur and without and the difference is huge. See comments at the end about this liqueur.
Add a cup or more of ice and blend till smooth. Taste it. If your banana isn't ripe enough you may need to add a half ounce of simple syrup. I've also made it adding 2 oz pineapple juice, if you want to try that, or you can add an ounce of cream to make it creamier. It's hard to mess this one up, so play with it. If you want to get fancy, you can sq**rt whipped cream on top.

Incentive to go out and buy banana liqueur:
You can make a Banana Daiquiri (with rum & lime), Banana Old Fashioned (with bourbon & bitters), Banana Alexander (with cognac & ice cream) or a Banana Martini (with Kahlua & cream). You can also drizzle it over ice cream or add it to banana bread or muffin recipes. If you like bananas, this is worth it.

SPRING BLUE MOJITO

The Spring Blue Mojito is an unusual twist on the classic mojito, which is made with rum, sugar, mint, and lime. Adding blueberries, cream of coconut, and blue curacao give it a gorgeous color and great tropical taste.

4 blueberries
half a lime, cut into wedges
6 fresh mint leaves5 oz cream of coconut
2 oz light rum5 oz blue curacao
3 oz club soda
Garnish with an extra sprig of mint and few more blueberries

In the bottom of a shaker, muddle 4 blueberries, the lime wedges, and fresh mint leaves. Smash 'em up real good. Then add the 1/2 oz of cream of coconut and continue to muddle until juicy and fragrant. Add rum and blue curacao and fill with ice. Shake vigorously to combine and chill everything well.
Strain into a tall glass, filled 3/4 full with ice. Top with club soda and give it a gentle stir. Garnish with more mint and blueberries. You could also garnish with a slice of lime.

St. Patrick's Day Edition

LEPRECHAUN LEMONADE

Here's a zesty little 3 ingredient cocktail made with clear liquor, lemonade, and a splash of blue curacao to give it color.

2 oz clear liquor (vodka or gin)
4 oz lemonade
splash of blue curacao
mint leaves
lemon slice

Fill a shaker with ice cubes. Pour the vodka and the lemonade in and shake well. Strain into a tall glass of fresh ice or just dump the whole thing in, ice and all. Add a splash of blue curacao. This is what gives it a magical green color. Full disclosure - my lemonade was more white than yellow, so I add one tiny drop of yellow food color. You could add green instead, but just a drop. Stir well and garnish with mint leaves and a lemon wheel. This would be so easy to make a batch. It's not very sweet, either, so if you want a sweeter drink, add simple syrup (start with a half ounce).

IRISH SIDECAR

The Sidecar is a classic cocktail from the 1920's, popular in Paris and London, and made with cognac, triple sec, and lemon juice. This variation, just in time for St Patrick's Day, uses Jameson Irish Whiskey in place of the cognac for an affordable, refreshing, and potent drink.

2 oz Jameson Irish whiskey
1 oz fresh lemon juice
1 oz triple sec5 oz simple syrup

Sidecars have a sugar rim, so prepare your coupe glass first. Put a ring of Karo syrup on one plate and sprinkle sugar or sugar sprinkles on another plate. Dip the rim in the corn syrup, then the sugar.

In a. cocktail shaker, add the whiskey, lemon juice, triple sec, and simple syrup. Fill with ice and shake vigorously for about 30 seconds. You want this ice cold. Strain into your prepared coupe and enjoy.

STRAWBERRY BASIL PALOMA

A Paloma is a cocktail made from tequila, lime, and grapefruit soda. This is a twist on it that I absolutely loved. It's enhanced with muddled strawberries and basil for extra fruity and herbaceous flavor.

2 oz tequila
1 oz agave nectar
1 oz fresh lime juice
2 strawberries + 1 to garnish
4 basil leaves
Fever Tree sparkling pink grapefruit soda

Muddle two strawberries in the bottom of a shaker. Add basil leaves, tequila, agave, and lime juice. Fill with ice and shake well. Strain into an ice filled glass, then top with the grapefruit soda - about 3 or 4 oz depending on the size of your glass. Garnish with a strawberry and basil leaf. Delicious!

Are you ready for Valentine's Day? Try this easy (and potent!) one for a romantic bubbly beverage.

1 oz gin5 oz Chambord or Raspberry Liqueur
4 oz Champagne or Prosecco
fresh raspberries to garnish

Put your champagne flute in the freezer. Fill a cocktail shaker with ice and add the gin and liqueur. Shake well. You want this to be as chilled as the champagne. Strain into your chilled champagne glass and top with bubbly. Garnish with a pick of raspberries or float some in there.
Note: the combination of gin, liqueur, and champagne is strong!

Friday Eve Cocktail Hour

SALTED CARAMEL MARTINI

The name says it all, a salted caramel dessert in a glass and it's absolutely decadent and delicious.

1 oz Ghiradelli caramel sauce
1.5 oz vanilla vodka
2 oz Irish cream liqueur
extra caramel sauce for the rim
coarse kosher salt
soft caramel candy for garnish

Roll the rim of the glass in a shallow dish or plate of caramel sauce. It helps if the glass is cold. Then roll the rim of the glass in a dish of kosher salt, coating lightly all the way around.
This rim really makes the drink!
In a cocktail shaker filled with ice, pour in the 1 oz caramel sauce, vodka, and Irish cream. Shake for at least 30 seconds, or longer if you can. Strain into prepared glass and garnish with a caramel candy.
Serve and enjoy.

Friday Eve Cocktail Hour

LEMON HEARTH

Oh. My. Goodness! This is the best hot toddy I have ever had! You don't even need sniffles to enjoy this on a cold winter's night.
Full disclosure: the garnish took longer than the drink, but it's so worth it.

1.5 oz Teeling Small Batch Irish Whiskey5 oz fresh lemon juice
1 TBSP honey
2 oz hot water
Lemon slice
whole cloves

Cut a lemon in half and stud the edge of it with cloves. I used an icepick to make a hole for the cloves to be inserted, then slice the lemon so you have a clove studded lemon slice. It will be a bit thicker than you normally would slice a lemon to allow for the cloves.

Heat 2 oz water and 1 TBSP honey in the microwave and stir. In a martini or coupe glass, pour in fresh lemon juice, the whiskey, then top with the hot honey water. Float the clove lemon slice carefully on top. The longer it floats, the more aromatic it becomes. I used a cute little cocktail glass that keeps your drink cold or warm, depending on what you put underneath it, but you can use a coffee cup in a pinch.
