Moroccan Chicken Tagine 🇲🇦🍋🫒

Ingredients:
1 kg chicken legs or whole chicken (cut into pieces)
2 onions, chopped
½ tsp salt
½ tsp turmeric
½ tsp black pepper
1 tsp ginger powder
2 tbsp chopped coriander
1 tbsp chopped parsley
3 tbsp sunflower oil
2 tbsp ghee
1½ cups water
1 cinnamon stick (or ¼ tsp cinnamon powder)
½ cup green olives
½ preserved lemon, sliced

Marinade:
½ tsp saffron
2 garlic cloves, paste
¼ red onion, paste
1 tbsp preserved lemon pulp
1 tbsp melted ghee
1 tsp salt
½ tsp black pepper
1 tsp ginger powder
2 tbsp chopped coriander

Steps:
Marinate the chicken with saffron, garlic, onion paste, preserved lemon pulp, ghee, salt, pepper, ginger, and coriander.

Cook chopped onions in sunflower oil and ghee until soft. Add turmeric, black pepper, ginger, cinnamon, and chicken stock cube. Add the marinated chicken and pour in the water. Simmer until the chicken is cooked.

Add green olives and preserved lemon slices and cook for another 10 minutes.

Remove the chicken, coat it with melted ghee and harissa, and place in the oven to brown.

Return the chicken to the tagine, garnish with coriander, parsley, and lemon slices, and serve with bread or couscous.

Ezme salad 🇹🇷🌶️

Ingredients:
- 2 red bell peppers
- 1 onion
- 3 tomatoes
- small bunch of parsley
- 2 chilies of choice
- salt & pepper
- 1 tbsp pepper paste or tomato paste
- 1 tsp sumac
- 1 tsp dried mint
- a drizzle of olive oil
- lemon

- blend all the veggies together then strain through a sieve.

- season with salt. Dried mint. Sumac. Pepper paste or tomato paste. A lemon. A drizzle of olive oil and mix it thoroughly.

- let the mixture sit for at least 30 minutes in the fridge so all the flavors get to know each other.

- serve with a drizzle of olive oil on top. Have it with grills or on its own with a loaf of bread and enjoy.

Homemade Nepali chicken momos (dumplings) with a spicy tomato chutney 🥟🌶️ Recipe credit Pang | Cook & Author

- 40 dumpling wrappers
Chicken filling
- 500g minced chicken
- ½ red onion, finely chopped
- ½ cup spring onion, finely chopped
- ½ cup fresh coriander, finely chopped
- 1 tbsp garlic, minced
- 1 tbsp ginger, grated
- 1 tsp turmeric
- 1 tsp red chili powder
- 1 teaspoon garam masala
- Salt
- 2 tbsp melted butter or ghee

Punchy Chutney
- 1 tbsp vegetable oil
- 2 red chilies, chopped
- 1 tbsp garlic, minced
- 1 tbsp ginger, grated
- 4 medium tomatoes, chopped
- ½ tsp turmeric
- 1 tsp chilli powder
- salt, to taste
- 2 tbsp toasted sesame seeds
- ¼ cup fresh coriander

To serve
- Chilli oil (optional)
- Coriander
- Sesame Seeds

To make the filling mix all of the ingredients in a bowl until well combined. Place 1 tsp of filling in the centre of a dumpling wrapper and line the edges with water. Place the centre of a dumpling wrapper and line the edges with water. Place the wrapper flat onto a working surface and working with both sets of index fingers and thumbs, pleat and pinch the edge of the wrapper to form what resembles a money bag. Pinch the wrapper at the end to ensure it is completely enclosed and sealed.
Steam dumplings on medium - high heat for 8 - 10 minutes.
To make the chutney, heat oil in a pan over medium heat. Add chilli, garlic and ginger and fry off until fragrant, about 1 minute. Add the chopped tomatoes, turmeric, chilli powder and salt and cook for about 5 minutes until the tomatoes have softened. Transfer to a blender and add sesame seeds and coriander. Blend until smooth.
To serve, spoon a generous amount of the chutney onto the serving dish followed by the dumplings. Drizzle with some chilli oil and top with coriander and sesame seeds.

Crispy Cilantro Lime Chicken Air Fried 🍗🔥🍋‍🟩

Ingredients
For the chicken:
1 Ib chicken breast, cut into pieces
• ½ cup flour
2 eggs
• 1/½-2 cups crushed cornflakes (or
Ritz crackers / taco shells)
• Salt & pepper
• Oil for frying (if frying)

For the cilantro lime sauce:
• 1 tbsp avocado oil
• ½ cup lime juice
• 1 tbsp honey
• 1 tsp cumin
3 garlic cloves, chopped
½ cup water
• Pinch of salt
• Handful of chopped cilantro

For the cucumber salad:
1 cucumber, sliced
½ cup red cabbage, thinly sliced
½ jalapeño, sliced (optional)
Juice of ½ lime
•Salt & pepper
Garlic powder
• Drizzle of olive oil

2-Ingredient Banana Coconut Cookies 🍌🥥

Ingredients:
• 2 ripe bananas
• 2 cups unsweetened shredded coconut
• ½ cup chocolate chips (optional)

Instructions:
1. Preheat oven to 350°F and line a baking sheet with parchment paper.
2. Mash the bananas in a bowl.
3. Add shredded coconut and mix until fully combined.
4. Scoop dough into small balls and place on the tray (leave space between).
5. Bake 12–15 minutes until set and lightly golden.
6. Melt chocolate chips in the microwave in 20-second bursts, stirring each time.
7. Drizzle over cookies and chill 30 minutes to set.

So simple, naturally sweet, and perfect for a quick treat ✨

Tanghulu (Chinese candied fruit) 🍓🍇

Origin:
Tanghulu is a traditional Chinese street snack made of fruit coated in hardened sugar syrup.

Recipe (1 serving):
• 4 tbsp sugar
• 2 tbsp water
• Washed and completely dried fruit (strawberries, grapes, mandarins, etc.)

Steps:
1. Add sugar and water to a heat-safe bowl. Do not stir.
2. Microwave in 30-second intervals until sugar dissolves and turns amber. Do not stir between intervals.
3. Once it starts coloring, switch to 15-second intervals (sugar burns fast).
4. Dip fruit into the hot syrup.
5. Immediately place in an ice bath to harden.
6. Enjoy right away.

Salad:
• 300g chicken breast, diced
• 1 tsp paprika
• Salt & pepper
• ½ red onion, sliced
• 2 cucumbers, diced
• Cabbage, thinly sliced (instead of lettuce)

Dressing:
• 1 avocado
• 1 tbsp Greek yogurt
• 1 tsp Dijon mustard
• Juice of 1 lemon
• Salt & pepper

Instructions:
1. Sauté chicken with paprika, salt, and pepper until cooked.
2. In a bowl, mix cabbage, cucumber, and red onion.
3. Blend avocado, yogurt, mustard, lemon juice, salt, and pepper until smooth.
4. Add chicken to the salad, pour dressing on top, and toss.

Carrot Cake (Eggless + Cream Cheese Frosting)

Cake Ingredients
• 2 cups all-purpose flour
• 1 ½ cups granulated sugar
• 1 tsp baking soda
• 1 tsp baking powder
• ½ tsp salt
• 1 tbsp cinnamon
• 1 tsp vanilla extract
• ½ cup neutral oil (vegetable/canola)
• 1 cup plain yogurt (or non-dairy yogurt)
• 2 tbsp lemon juice (or vinegar)
• 2 cups grated carrots
• ½–¾ cup chopped walnuts or raisins (optional)

Instructions
1. Preheat oven: 350°F (175°C).
2. Mix dry: Flour, sugar, baking soda, baking powder, salt, cinnamon.
3. Mix wet: In a separate bowl, whisk oil + yogurt + vanilla + lemon juice.
4. Combine: Add wet to dry and stir until just combined.
5. Fold in: Grated carrots + nuts/raisins if using.
6. Bake: Pour into a greased cake pan and bake 30–35 minutes (or until a toothpick comes out clean).
7. Cool completely before frosting.



Cream Cheese Frosting
• 8 oz cream cheese, softened
• ½ cup unsalted butter, softened
• 2–3 cups powdered sugar (to taste)
• 1 tsp vanilla extract
• Optional pinch of salt
