Moroccan Chicken Tagine 🇲🇦🍋🫒
Ingredients:
1 kg chicken legs or whole chicken (cut into pieces)
2 onions, chopped
½ tsp salt
½ tsp turmeric
½ tsp black pepper
1 tsp ginger powder
2 tbsp chopped coriander
1 tbsp chopped parsley
3 tbsp sunflower oil
2 tbsp ghee
1½ cups water
1 cinnamon stick (or ¼ tsp cinnamon powder)
½ cup green olives
½ preserved lemon, sliced
Marinade:
½ tsp saffron
2 garlic cloves, paste
¼ red onion, paste
1 tbsp preserved lemon pulp
1 tbsp melted ghee
1 tsp salt
½ tsp black pepper
1 tsp ginger powder
2 tbsp chopped coriander
Steps:
Marinate the chicken with saffron, garlic, onion paste, preserved lemon pulp, ghee, salt, pepper, ginger, and coriander.
Cook chopped onions in sunflower oil and ghee until soft. Add turmeric, black pepper, ginger, cinnamon, and chicken stock cube. Add the marinated chicken and pour in the water. Simmer until the chicken is cooked.
Add green olives and preserved lemon slices and cook for another 10 minutes.
Remove the chicken, coat it with melted ghee and harissa, and place in the oven to brown.
Return the chicken to the tagine, garnish with coriander, parsley, and lemon slices, and serve with bread or couscous.
