Make your own perfect pumpkin spice blend šŸ˜

Fall baking is here, and I’m sticking to that. But I haven’t found a store bought pumpkin spice blend I like quite as much as this homemade one.

I will often double or triple just to keep it on hand and toss some in any granola, cookie, bagel, or coffee recipe I happen to be making.
This is heavier on the all spice and nutmeg, which I love. But you can always adjust to your liking. 🄰

Pumpkin Spice Blend Recipe

2 tbsp and 2 tsp cinnamon
1 tbsp ground nutmeg
2 1/2 tsp ground all spice
2 tsp ground ginger
1/2 tsp ground cloves

Add to a mason jar or other container, mix well. Voila! This one batch makes about 10 servings when using 1-1 1/2 tsp.

Now go bake something delicious šŸ˜‹

Well well well…I’ve been wrong šŸ™ƒ

I set out to kinda prove that oatmeal cookies aren’t that great. Even if you tweak it and add in extra flavor. It would still fall flat.

But I was wrong. Toasting the oats was the way to go. Adding in the brown butter and tallow has kept these cookies moist so far (I will report back after they sit 24 hrs). I also added 1 tsp of chai spice and it just adds a si the something extra. Not too much.

They’re honestly just perfection.

I expected them to spread more than they did (especially because I baked the GF version) but they held their shape really well!

Im a girl who can admit when she was wrong. And I was wrong. Oatmeal cookies can be done right! Make them regular or Gf, I think you will be pleased.

Some of you are going to hate thisā€¦šŸ¤£šŸ™ƒšŸ„“

But isnt it kinda fun to see how the sausage is made?! I mean I could just show you the perfected oatmeal cookie once it’s all done, but sometimes it’s fun to show you what it takes to make one.

The countless hours, batches, and ingredients it takes to get it right. Tweaking things here and there to make sure they will turn out right the first time for you.

I get asked a ton about an oatmeal cookie recipe. And I share in the video my feelings behind it. So trying a few different techniques to add in more flavor and moisture.

So I don’t have a recipe YET but come back tomorrow and I’ll show you the end result. And then maybe then I’ll have the recipe for ya šŸ˜‰šŸ™Œ

I know you all hate that šŸ™ƒ

One of the biggest complaints I get (besides slamming 🤣) is that some of my videos don’t show the end result. So I thought I would share why. Not trying to tease or be cryptic at all, just genuinely sharing in real time as I go.

I prep the ingredients 2-3 days before and have one big bake day so everything is as fresh as possible. I wish I could do it all the morning of but at the volume I just wouldn’t have time in my tiny oven.

On the days I prep I love sharing techniques and troubleshooting tips. On the days I bake I love then sharing the end result.

The only cinnamon recipe you’ll ever need… 🄰

The one thing that constantly humbles me and stops me in my tracks is getting all the pictures, emails, and messages of your cinnamon rolls you made using my recipe. ā¤ļøšŸ„¹

It truly warms my heart. So many do you share great details of your families, your traditions, and how you shared them with your neighbors and friends who also loved them.

It’s crazy cool!

Is browned butter really worth the hassle?! šŸ™ƒ

I 100000% say yes. And it’s really not a hassle to make.

If you’ve ever tried a cookie, cake, or brownie with browned butter you know what I mean. That subtle something special about it but you can’t quite put your finger on it?!

Like you’ve had a chocolate chip cookie thousands of times, why is this one so good??!

And while it’s quick and simple to make in a pan, some people are intimidated by that because it can burn so easily. Others have to make such a large quantity that they decide not to since they don’t have a segue enough pot.

The oven method is the way to go if you agree with any of those statement above. It’s hard to burn, easy to do, and allows you to do other things while it’s browning instead of standing over a pot.

Here’s my simple guide:

To brown 2-4 sticks 350 it will usually take 15-20 minutes unless you use a deeper, smaller pan. Then longer

Browning 3-8 sticks will take 30-45 minutes 350 (again, not a deep pan)

10+ sticks at 350 will be about an hour, give or take 5 minutes.

Always stir halfway through and when it’s done and out of the oven. Use the time as a guide but remove from oven when the butter looks like the end of my video. Little brown bits all throughout.
