Lunch for my office job this week 😊 I made Hawaiian pineapple chicken paired with cilantro rice, pico de gallo and avocado. This is one of my favourite meals right now, because it is so filling and I am obsessed with grilled pineapple!

As you can see, I packaged the vegetables separately and then I prepared pico de gallo for two days and remade it again for the next two days to eat it as fresh as possible!

Took me about 30 min to make a week's worth of this. 2 meals a day for 5 days. It taste like beef stew without the broth...

6 lbs turkey, 1 bag dried chickpeas, 1 bag frozen peas/butter squash/sweet potato/spinach/ and a half carton of egg whites.

Seasoned with brown sugar, onion, and fresh garlic. High in protein with a balance of carbs and fats.

This week’s meal prep! Have lost 100 lbs eating like this. Here’s this week’s meal prep:

Top shelf (lunch): [edit: half] gallon sized mason jars of salad with chopped fruit, celery, cauliflower, and cabbage. Spinach base.

Middle shelf (breakfast): oatmeal with flax, chia seeds, cinnamon, dates, apples, protein powder and PB. Fruit toppings.

Bottom (dinner): beet and apple sauerkraut + za’atar roasted cauliflower, asparagus, onion, mushroom and potatoes.

Stays fresh for a whole week, does not get soggy. Probably because the mason jars are made for food preservation. You can buy the ball mason jars on amazon or at target. Top shelf is gallon size, the rest are quart.

Fridge is a commercial fridge from Home Depot online. I like it but it’s loud and expensive.

A lot of the fruit is from my backyard garden, but yes—eating this way is definitely a privilege. This is about $300/groceries and feeds me (breastfeeding so eating more) and my husband for one week. Not cheap, would be cheaper if we didn’t buy organic.

Sharing the lesson that I, the idiot, just learned. Every August I freeze about 400 portions of food for my family. This year I wanted to go no-waste, so I used Mason jars. Apparently there are specific steps to follow when freezing jars; not knowing this has cost me easily 60 portions.

I may have meal prepped a little too close to the sun. My husband and I spent three days over the last weekend to meal prep. We ended up with over 600 individually portioned meals. We made 13 different meals, with some of them being flexible in how they are served: fajitas/stir fry.
