What can you do in a beautiful and functional kitchen designed and built by Martys Kitchens and Cabinets ? You can create thousands of healthy food items for your family. One of the things I like to make is healthy butter for my homemade sourdough bread. Making butter is easy to do and here are the steps to do it.
1. Only start with pure organic heavy cream. I like organic valley because there are no unwanted ingredients. Always check the ingredient list because some actually have unhealthy items.
2. If you have a stand mixer I highly recommend using this. You can use a hand mixer but that might be tiring since it will take 20 minutes to get butter.
3. Mix the heavy cream on a medium high setting and it will transform slowly from heavy cream to whipped cream and eventually to butter. Don't stop mixing until you have full separation of the butter fats and the butter milk. See photo.
4. Once full separation occurs, it is essential to remove residual buttermilk from the butter fats. If you don't the butter will spoil fast. To do this first place cheesecloth in a colander and transfer the mixture to it. It will be chunky like shown in the photo. Almost like scrambled eggs. Let it drain off the buttermilk and save the buttermilk for pancakes or other recipes. What I also like to do is to run clean water from my reverse osmosis system before I combine the butter. I like to use my RO water because it's very pure and clean without adding any potential contaminants back into the butter.
5. Next take the butter fats out of the cheesecloth and continue to rinse it under clean water until it runs clear. This way you are sure to have removed all the buttermilk from the butter fats to ensure it stays fresh for a very long time. When you rinse the butter make sure you rinse it in ice water to prevent it from melting and sticking to everything.
6. This is the point where you can add anything you want to the butter. You can leave it unsalted or add salt or spices or whatever you want. In my instance I like rosemary garlic butter with a dash of paprika. You can adjust the spices to your liking. Sometimes mixing the butter can be difficult becaus of the ice water so what I do is just put it into the microwave for 5 or 10 seconds to soften it just enough so I can mix in my spices.
7. Your butter is now done and ready to use and you can form it into anything you like. You can leave it as a big Butter ball but I like to shape mine into either a cylinder or a long rectangle like traditional butter you buy from the store. Wrap the butter in wax paper and form it any way you like then keep it in the refrigerator for use at any time. You can freeze it if you don't expect to use it right away but it's so delicious I'm sure you're going to want to use it immediately. Homemade butter is so much creamier with a full flavor You will be amazed at the difference. No store-bought butter compares to homemade butter.
