πŸ«’ Rustic Olive, Capers & Herb Bread Rolls
Ingredients
3Β½ cups (440 g) all-purpose or bread flour
2ΒΌ teaspoons instant yeast
1Β½ teaspoons salt
1 tablespoon honey
1ΒΌ cups warm water
3 tablespoons extra-virgin olive oil
Β½ cup Kalamata olives, pitted and chopped
2 tablespoons capers, drained and chopped
2 cloves garlic, finely minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme leaves
Β½ teaspoon black pepper
Instructions

1. Make the dough:
In a large bowl, combine warm water, honey, and yeast. Let it sit for about 5 minutes. Add flour, salt, and olive oil. Mix until a soft dough forms.

2. Knead:
Transfer the dough to a lightly floured surface and knead for 8–10 minutes, until smooth and elastic. You can also use a stand mixer with a dough hook.

3. Add the Mediterranean flavors:
Gently knead in the chopped olives, capers, garlic, parsley, rosemary, thyme, and black pepper until evenly distributed throughout the dough.

4. First rise:
Place the dough in a lightly oiled bowl. Cover with a clean towel or plastic wrap and let it rise in a warm place for 1–1Β½ hours, or until doubled in size.

5. Shape the rolls:
Punch down the dough and divide it into 8–10 equal pieces. Shape each piece into a smooth ball and arrange them on a parchment-lined baking sheet, leaving space between each roll.

6. Second rise:
Cover loosely and let the rolls rise for another 30–40 minutes.

7. Bake:
Preheat the oven to 400Β°F (200Β°C). Brush the tops lightly with olive oil and bake for 20–25 minutes, until golden brown and cooked through.

Allow the rolls to cool slightly before serving. For extra flavor, brush them with olive oil immediately after baking and sprinkle with fresh herbs. These rustic rolls are best served warm and make a wonderful addition to any Mediterranean-inspired meal.

4 tablespoons butter
5 cloves garlic, mincedIngredients
1Β½ lb (700 g) sirloin steak, cut into bite-size pieces

Β½ teaspoon black pepper
1 cup shredded mozzarella cheese
Β½ cup shredded cheddar cheese
2 tablespoons fresh parsley, chopped
1 tablespoon grated Parmesan, optional
Β½ teaspoon red pepper flakes, optional
Instructions

1. Cook the potatoes:
Wash and halve the baby potatoes. Heat 1 tablespoon olive oil in a large oven-safe skillet over medium-high heat. Add the potatoes, cut side down, and cook for 8–10 minutes, turning occasionally, until golden and nearly tender. Remove and set aside.

2. Sear the steak:

πŸ§€ Loaded Cheesy Bacon Ranch Potatoes
Ingredients
2 lb baby potatoes, sliced into ΒΌ-inch rounds
6 slices bacon, cooked and crumbled
1Β½ cups shredded cheddar cheese
Β½ cup shredded mozzarella cheese
2 tbsp olive oil
1Β½ tsp ranch seasoning
1 tsp garlic powder
Β½ tsp smoked paprika
Β½ tsp Italian seasoning
Salt and black pepper, to taste
2 green onions, finely sliced
2 tbsp chopped fresh parsley

Optional Ranch Dip

Β½ cup sour cream
2 tbsp mayonnaise
1 tbsp ranch seasoning
1 tbsp chopped parsley
Instructions

1. Prepare the potatoes:
Preheat your oven to 425Β°F (220Β°C). Wash and dry the potatoes thoroughly, then slice them evenly. Keeping the slices similar in size helps them cook at the same rate.

2. Season:
Place the potato slices in a large bowl. Add olive oil, ranch seasoning, garlic powder, smoked paprika, Italian seasoning, salt, and black pepper. Toss until every potato is evenly coated.

3. Roast:
Arrange the potatoes in a single layer in a large oven-safe skillet or baking dish. Avoid overcrowding so the edges can become golden and crispy. Roast for 25–30 minutes, flipping halfway through.

4. Add the toppings:
Remove the skillet from the oven and sprinkle the roasted potatoes generously with cheddar and mozzarella cheese. Scatter the crumbled bacon over the top.

5. Melt the cheese:
Return the skillet to the oven and bake for another 5–8 minutes, or until the cheese is completely melted, bubbling, and lightly golden.

6. Garnish and serve:
Remove from the oven and immediately sprinkle with sliced green onions and fresh parsley. For an extra creamy finish, drizzle with ranch dressing or serve alongside a homemade ranch dip.
