One VERY tasty way to eat your sweet potato leaves is to turn them into a pesto! 🍠🌿🌱

I blanched my sweet potato leaves and blended them with older spinach, garlic, extra virgin olive oil, toasted walnuts, lemon, and a touch of soy sauce. Delicious!!!

🌱🍠 HARVEST TIME can sometimes look like picking sweet potato slips for their delicious, nutrion-packed leaves, and then letting the cuttings sit in water, until they root. From there, ill be re-planting the rooted slips into the ground to allow for a bigger sweet potato yield!!

I plan to use the sweet potato leaves in a walnut pesto I'll incorporate into tomorrow's dinner. Stay tuned!! 🍠🌿

Want a fun and easy way to incorporate more tasty, fiber-packed veggies & legumes into your meals?? One way is to blend your cannellini beans & (thawed) bag of mixed veggies, then incorporate them into your chicken meatballs!!!

The beans act as a natural binder, making the meatballs moist and very filling. Sooo tasty!!

P.S. Don't forget to add your favorite spices!!

!!! While I was gardening this evening, I did a lil impromptu harvest of my blossoming Florida Betony, aka Stachys floridana, or, Rattle Snake W**d. While the leaves can be cooked or dried up for tea, from my research, the TASTIEST part of this plant are the tubers, which look like...white beaded grubs, lol.

Without disturbing the flowers too much, I gently worked by way to hand-digging to the roots until I found and gently plucked each of these half-inch to 3 inch tubers. They can be eaten raw or pickled!

How does it taste?? Crunchy, yet delicate and pleasant. It has a very mild, yet subtly sweet flavor, like a sweet radish (without the heat). I like it a lot!!

Hey...you might have these growing around you...and if you do, I recommend harvesting the tubers springtime (now) before summer, while the tubers are still bright and firm.

To eating the weeds!! 🌱🌿

I improvised in my kitchen this evening and concocted something pretty fun & delicious to eat: air-fried cauliflower fritters!

In a food processor, I combined over 2 cups frozen cauliflower rice, 2 eggs, minced garlic, onion powder, a little bit of soy sauce, 4 teaspoons of corn starch, and a couple of pieces of my homegrown green onion together, until it formed a batter-like consistency.

I then lined an air fryer tray w parchment paper with a little olive oil and poured out the fritter batter in a single even layer. I airfried it at 400 degrees for about 22 minutes. At the halfway mark, when the batter began to firm up, I cut it into pieces, flipped each piece, and cooked for the remaining time. I then served these with a garlicky greek yogurt/parmesean cheese dipping sauce. Soooosoooo easy and good! Im making these again!

Since it uses cauliflower, these also happen to be lower in carbs. What a FUN way to eat your vegetables. 10/10!!
