The health of the soil, growing practices, harvest timing, and how far food travels all play a role in the nutrients that ultimately make it to your plate.
This is one of the reasons I advocate for growing food at home and supporting local growers whenever possible. When we become more connected to where our food comes from, we become more connected to our own health.
Food is more than calories.
It’s information for your body.
