🍁🥖Cozy Fall Maple Pecan Sourdough Loaf🍁🥖
🍴 Ingredients:
🌾 ½ cup active sourdough starter, ripe and bubbly
💧 1¼ cups water, room temperature
🍁 ⅓ cup pure maple syrup
🥖 3¼ cups bread flour
🌾 ⅓ cup whole wheat flour
🧂 1½ teaspoons salt
🥜 1⅓ cups chopped pecans, lightly toasted
📋 Directions:
1️⃣ In a large bowl, mix the sourdough starter, water, and maple syrup until fully combined.
2️⃣ Add the bread flour and whole wheat flour, then mix until a shaggy dough forms.
3️⃣ Cover the bowl and let the dough rest for 30 minutes. Add the salt and knead gently until fully incorporated.
4️⃣ Let the dough rest for another 30 minutes, then perform stretch-and-folds by pulling the edges of the dough upward and folding them over itself. Repeat the stretch-and-fold process every 30 minutes for 2 hours.
5️⃣ During the second stretch-and-fold, gently fold in the chopped toasted pecans until they are evenly distributed throughout the dough.
6️⃣ Cover the dough and allow it to rise at room temperature until it becomes noticeably puffed and nearly doubles in size, about 3-4 hours.
7️⃣ Shape the dough into a tight round loaf and place it seam-side up in a floured proofing basket or bowl. Cover and refrigerate overnight for 12-18 hours.
8️⃣ Preheat the oven to 475°F (245°C) with a Dutch oven inside for 30 minutes.
9️⃣ Transfer the chilled dough onto parchment paper. Score the top with a sharp bread lame or knife, then carefully place the dough into the hot Dutch oven.
🔟 Bake covered for 20 minutes. Remove the lid and bake for another 20-25 minutes, until the crust is deeply golden brown and crisp.
1️⃣1️⃣ Carefully remove the loaf from the Dutch oven and cool completely on a wire rack before slicing.
