Canyonlands doesn’t announce itself.
You just keep driving… and then you’re pulling over again. And again.

Rock folding into sky. Water catching light. Silence doing most of the talking.

Then a condor slid across the air slow, wide, unbothered. I always get stupid excited when I see them. Something about the way they fly feels attentive. Like nothing is rushed. Like everything matters.

It probably makes no sense.
But neither does love when it’s real.

This road, these stops, this moment—I’ll carry it longer than I planned to.

Ever wanted to get slapped in the face by the Colorado River and call it a vacation? SAME. 💦💀 We survived Class 3 rapids, saw canyon walls older than your grandma’s sass, and even found a restroom with a view that made us question all of our life choices. 🤣

Shout out to our Hualapai guides for keeping us alive, hydrated, and laughing despite screaming like toddlers on a sugar crash. From ancient rock formations to surprise waterfalls, this tour was WILD in every sense of the word. 10/10 would do again, preferably with dry underwear next time. 🚣‍♀️🧼👀

Keto Bok Choy with Garlic Sauce
I’ve been trying to cook lite for Summer. It’s 117 degrees here in Las Vegas so eating lite and drinking lots of water is a must! Here is a very tasty recipe, enjoy!

2 lbs baby bok Choy
1 Tbsp oil
1 tsp salt
3 tbsp coconut aminos
8-10 garlic cloves
1 tbsp sesame oil
1 tsp fish sauce
1 tbsp swerve

Prepare the Bok Choy by cutting it in half. If the Bok Choy is large, cut it in half again.
Bring a pot of water to a simmer and add 1 tbsp of oil and 1 tsp of salt. Blanch the Boy Choy for 5 minutes. You want it to be soft yet still crunchy. Set aside.
Add in minced garlic, fish sauce, coconut aminos sauce, swerve, and sesame oil in a pan. Let it simmer for 1-2 minutes, or until the sugar has melted.
Drizzle the sauce over the bok choy.

Keto Spicy Korean Cucumber
Refreshing light dishes are my favorite right now. You know I love dump everything in one bowl kinda recipes, this is one where you chop the cucumbers and dump them mix and enjoy!

2 Cucumbers
2 garlic cloves
1/2 Onion
2 Tbsp Korean chili paste
1 tbsp sesame seed oil
1 tbsp sesame seeds
2 tbsp swerve sugar
1 tsp salt

Slice cucumber in half then slice and then in small pieces. Chop and smush garlic cloves. Slice onion in small slivers.

Place all sliced veggies in medium bowl
Then all chili paste, sesame seed oil, sesame seeds, swerve sugar, salt and mix.

Keto Zucchini Pasta Carbonara Prosciutto and Ricotta-
Summer brings in the best veggies and fruits. Fresh broccoli and Zucchini, and herbs have so much aroma too. Check out this Summer recipe and enjoy!

2 whole Zucchini
2-3 Cups broccoli florets
4 Garlic cloves minced or grated
1/4 tsp Salt and pepper
3 ounces of Prosciutto torn
1 zest of Lemon
1 egg beaten
1 cup grated Parmesan
6 basil leaves
2 fresh thyme or 1 tsp dried
2 tbsp salted butter
4 ounces or 1 Cup whole milk Ricotta

Preheat the oven to 425• On a baking sheet, toss together the broccoli, olive oil, garlic, salt and pepper. Bake 10 minutes, remove from the oven.
Add the pulled apart prosciutto around the broccoli. Bake another 10 minutes, or until the prosciutto is crispy. Once it’s done toss the hot broccoli in lemon zest.
Meanwhile, whisk the egg and Parmesan together

Thinly slice your zucchini long way then slice in half to resemble pasta. Add your butter to pan basil and thyme too, then cook zucchini for 1 minute to coat in butter. Immediately add your egg and Parmesan mixture and quickly toss together so eggs don’t scramble. Add more butter if needed for a sauce consistency.

Add Ricotta to food processor and whip.

Spread ricotta onto plate then zucchini, broccoli and prosciutto mix next.

Keto Hawaiian Beef Teriyaki

The sweet aroma of Hawaiian food
Is so amazing. I love cooking with essential oils mixing ingredients to get as close as possible to something.
In this recipe I used an orange and grapefruit oil with lemon juice to try to get close to a pineapple. I’m very pleased! Enjoy!

4-5 Garlic Cloves (chopped)
1/8 Tsp Salt
1 Cup coconut aminos or Soy sauce
2 Tbsp fresh ginger
2 Tbsp Brown Swerve Sugar
1 Tbsp rice vinegar
1 Lemon juiced
3 drops orange essential oil
3 drops grapefruit essential oil
2 Tbsp salted butter

Mix all ingredients in a large bowl and marinate for at least 30 minutes. Longer is better, add your vegetables to the sauce or butter them.

Keto Salsa Guacamole
I’m know for eating my food mixed with everything. Most of the time I’m spot on, and when someone tries my mixes they’re like yumm! Share your favorite mixes with me and I’ll share my salsa guacamole with you. Enjoy!

3-4 Large avocados
Juice from 1 lime
Juice from 1/2 Lemon
1/2 tsp Cumin
1/2 Cup chopped cilantro
Salt to taste
1 small jar of favorite salsa 4-6oz

Chop avocados in small squares.
Squeeze lemon and lime add to chopped avocados. Add cumin and salt and mash with fork. Now mix in chopped cilantro. Place salsa over guacamole 🥑 sauce nice plated, chop up your favorite veggies for dipping.

Keto Lemon Cake
Yayee, a moist keto cake has arrived.
Good flavor, great texture, win win!
I’m a huge fan of dump all ingredients in one bowl and mix. This is the best one. Enjoy!

3 Cups Almond flour
3/4 Cup Swerve (keto sugar)
1/4 Cup Vanilla egg white protein powder
2 tsp baking powder
Zest from one whole lemon
Juice from one whole lemon
1/4 Cup almond milk unsweetened
3 eggs large
1 tsp vanilla extract
3-4 drops lemon essential oil
1/2 Cup melted butter salted

Carefully mix all ingredients well
I used a circle pan with a oil sprayed wax liner. Cook 325 for 35-45 minutes

For the Glaze
1/4 Cup plus 1 tbsp powder sugar (keto) swerve or lankanto
2 tbsp lemon juice

Mix and set aside until cake has cooled

Keto Açaí Bowl- Summer treats are so refreshing. Super foods that are cold and light make it my kinda summer. Load your bowl however you like, here’s some ideas. Let me show you my Açaí bowl. Enjoy!

Chia pudding
2 Cups of coconut or almond milk
1/2 Cup chia seeds
2 tbsp sugar free maple syrup
2 tsp vanilla extract
1/4 tsp salt

Açaí SMoothie
2 packets Acai unsweetened (samba on brand) from sprouts or target
2 tbsp coconut milk
1 tsp vanilla extract
1 tbsp swerve sugar

Toppings
Blueberries
Almond Butter
Almond slices
Keto yogurt
Cinnamon

Chia pudding all ingredients mixed and set in a separate container let set for 1 hour before serving.

Smoothie ingredients whip in blender right before putting bowl together. Add toppings then too!

Flank steak- seasoned with Kinders taco blend and lime juice

Cucumber
Pickled onions
Jalapeños
Radish
Shredded cheese
Sour cream
Sliced beets
Lettuce

Dressing:
1/4 Cup salsa
1/4 Cup sour cream
2 tbsp olive oil
1 lime juiced
Salt and pepper to taste

For fat free option:
Fat free sour cream
Salsa
Lime juice

Korean Spicy coleslaw
It’s so incredible how this slaw gets better as it ages. Naturally ferments and so delicious. Enjoy!

1 whole cabbage
2 garlic cloves
1 large carrot
2 tbsp rice vinegar
1 tbsp fish sauce
2 tbsp coconut aminos or soy sauce
1 tbsp toasted sesame seed oil
1 tbsp lemon juice
2 tbsp chili paste
1 tbsp swerve
Salt to taste
1 tbsp sesame seeds
1 cup chopped green onion
1/2 tsp ginger

Chop all ingredients finely and mix together. Store in refrigerator up to 6 days. I used the brand mother in laws chili paste, swerve keto sugar is my go to sweetener.

Boil and cook 4 Eggs
2 strips of bacon crumbled
Mix 3 tbsp Mayo or ranch dressing
Mix Mayo and bacon into cook yolks
Garnish with lettuce and tomato or salsa
