Peanut Butter Muffins
🧁 Soft, fluffy, and bursting with peanut butter flavor! Perfect for breakfast, snack time, or anytime you're craving something comforting and delicious. 🥜✨
Ingredients:
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup creamy peanut butter
1/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/4 cup packed light brown sugar
2 large eggs
1 tsp vanilla extract
1 cup buttermilk
Instructions:
Preheat the oven to 375°F (190°C). Line a muffin pan with paper liners or grease it. 🕒 (5 minutes)
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. 🧂🕒 (3 minutes)
In a large bowl, using a hand mixer or stand mixer, beat the peanut butter, butter, granulated sugar, and brown sugar until smooth and creamy. 🥄🕒 (2-3 minutes)
Add in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. 🥚🕒 (2 minutes)
Alternately add the dry ingredients and the buttermilk to the wet mixture, beginning and ending with the dry. Mix until just combined—don’t overmix! 🌀🕒 (3-4 minutes)
Divide the batter evenly among the muffin cups, filling each about 2/3 full. 🧁🕒 (2 minutes)
Bake in the preheated oven for 15–18 minutes, or until a toothpick inserted in the center comes out clean. 🔥🕒 (15-18 minutes)
Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely. ❄️🕒 (10 minutes)
