Slow Cooker Barbacoa Recipe 🌮🐂
This Slow Cooker Barbacoa is tender, flavorful, and incredibly easy to make. With smoky, spicy, and tangy notes, it's perfect for tacos, burrito bowls, or salads!
Ingredients
1️⃣ 3 lbs beef chuck roast (cut into large chunks) 🥩
2️⃣ 4 chipotle peppers in adobo sauce, finely chopped 🌶️
3️⃣ 4 garlic cloves, minced 🧄
4️⃣ 1 medium white onion, diced 🧅
5️⃣ 1/4 cup fresh lime juice 🍋
6️⃣ 2 tbsp apple cider vinegar 🍎
7️⃣ 3/4 cup beef broth 🥣
8️⃣ 1 tbsp ground cumin
9️⃣ 1 tbsp dried oregano 🌿
🔟 1 tsp smoked paprika
1️ 1/4 tsp ground cloves (optional for authenticity)
2️ 1 bay leaf 🍃
3️ Salt and pepper to taste 🧂
Instructions
1️⃣ Prep the Beef
Pat the beef dry and season generously with salt and pepper.
2️⃣ Make the Sauce
In a blender or mixing bowl, combine chipotle peppers, garlic, onion, lime juice, vinegar, beef broth, cumin, oregano, paprika, and cloves. Blend or whisk until smooth.
3️⃣ Slow Cook
Place the seasoned beef in a slow cooker. Pour the sauce over the beef and add the bay leaf.
Cover and cook on low for 8-9 hours or high for 4-5 hours, until the beef is tender and easily shreds.
4️⃣ Shred the Beef
Remove the beef from the slow cooker and shred it using two forks.
Return the shredded beef to the cooker and mix it into the sauce to soak up the flavors.
