Meal prep doesn’t have to be boring 🤠🥩
This Steak Cowboy Caviar is loaded with protein, packed with flavor, and honestly gets better after sitting in the fridge overnight. Perfect for lunches, quick dinners, or eating straight out of the container standing in your kitchen.
Fresh veggies + steak + big protein = hard to beat.
Ingredients
1 lb steak (sirloin or flank works great)
1 can black beans, drained & rinsed
1 can corn, drained
1 cup cherry tomatoes, diced
2 bell peppers, diced
1 whole red onion, diced
2 jalapeños, diced
1 avocado, diced
Instructions
-Season steak with salt and pepper, then cook to your liking.
-Let the steak rest, then dice into bite-sized pieces.
-Add black beans, corn, cherry tomatoes, bell peppers, red onion, jalapeños, avocado, and steak to a large bowl.
-Season the bowl with salt, pepper, Italian seasoning, and red pepper flakes.
-Add feta, lime juice, and olive oil if using, then mix everything together.
-Store in the fridge for the perfect high-protein meal prep all week 🤝
