Ingredients:

4 cups chopped rhubarb (fresh or frozen)

1 cup granulated sugar

1 (3 oz) box strawberry Jell-O powder

1 box yellow or white cake mix (15.25 oz)

These cookies are bursting with tart rhubarb, sweet strawberries, and finished with a luscious glaze. Perfect for summer picnics, afternoon treats, or just because.

Ingredients:

1 cup butter, softened

1 cup sugar

1 egg

1 tsp vanilla extract

2½ cups flour

🍋 Naturally Pink Rhubarb Lemonade

I used to burn everything I cooked, even water once. But this lemonade? This one was a win.

It started with a few sad rhubarb stalks in my fridge, two overheated kids, and zero time. So I made a quick syrup. Poured it over ice. Squeezed a lemon. The result? A glass of sunshine.

Now it's our favorite summer drink. No food dyes, no fancy blenders, just rhubarb, lemons, and love.

Here’s how you make it:

📝 Ingredients
✔ 3 cups chopped rhubarb
✔ 2 large lemons (zested + juiced)
✔ 1.5 cups sugar
✔ 3 cups water

👩‍🍳 Instructions

Add rhubarb, lemon zest, juice, sugar, and water to a pot.

Bring to a boil, then simmer 20 mins until soft.

Let cool. Mash gently. Strain into a bowl.

To serve: mix 1 cup of syrup with 3 cups of cold water. Pour over ice.
