Chicken Pot Pie Casserole - Cozy, Creamy & Family-Approved!

🛒 Ingredients (Serves 6)
3 cups cooked shredded chicken (rotisserie works great!)
2 cups frozen mixed vegetables (peas, carrots, corn)
1/2 cup chopped onion
1/4 cup butter
1/4 cup all-purpose flour
1 1/2 cups chicken broth
1 cup milk
1/2 tsp garlic powder
1/2 tsp dried thyme or poultry seasoning
Salt & pepper to taste
1 can refrigerated biscuit dough (or 6 homemade biscuits)
