Loaded Garden Veggie Omelet
The Hook: Start your day with a vibrant, protein-packed breakfast! 🍳 This fluffy omelet is bursting with fresh spinach, juicy bell peppers, and savory sautéed mushrooms. Healthy never tasted so good!

Ingredients
Eggs: 2–3 large eggs (whisked with a splash of milk)

Veggies: Diced red and yellow bell peppers, sliced mushrooms, fresh baby spinach

Cheese: ¼ cup crumbled feta or goat cheese

Butter: 1 tbsp for the pan

Sides: Thick-cut whole-wheat toast

Step-by-Step Instructions
Sauté the Veggies: Melt half the butter in a skillet over medium heat. Sauté the mushrooms and peppers for 3 minutes, then toss in the spinach just until it wilts. Set veggies aside.

Cook the Eggs: Melt the remaining butter, pour in the whisked eggs, and let them set. Gently lift the edges to let uncooked egg run underneath.

Fold & Serve: Add the sautéed veggies and cheese to one half of the eggs. Fold the other half over, cook for one more minute, and slide onto a plate with a side of crispy toast.

Creamy Spinach & Ricotta Lasagna Rolls with Garlic Shrimp

Prep time: 15 mins | Cook time: 20 mins

Ingredients
6–8 lasagna noodles, cooked al dente

1 cup ricotta cheese

1 cup fresh spinach, wilted and squeezed dry

1/2 cup shredded mozzarella + extra for melting

1/4 cup grated parmesan

1 egg (to bind the filling)

1/2 lb large shrimp, peeled and deveined

1 tbsp garlic butter

1.5 cups vodka sauce or tomato cream sauce

Red pepper flakes and chopped parsley for garnish

Instructions
Make the Filling: In a bowl, mix the ricotta, wilted spinach, mozzarella, parmesan, egg, salt, and pepper.

Roll & Bake: Spread a thin layer of the filling along each cooked lasagna noodle, then roll them up tightly. Place the rolls cut-side up in a baking dish surrounded by your favorite tomato cream sauce. Top with extra mozzarella and bake at 375°F (190°C) for 15 minutes until bubbly and melted.

Cook Shrimp & Assemble: While baking, sear the shrimp in a hot skillet with garlic butter for 2 minutes per side.

Serve: Plate the hot lasagna rolls, crown each one with a juicy garlic shrimp, spoon over extra sauce, and top with parsley and red pepper flakes.

Prep time: 5 mins | Cook time: 15 mins

Ingredients
6 large shrimp, peeled and deveined

1 cup cooked yellow rice (mixed with peas, diced carrots, and corn)

1 tbsp olive oil

1 tsp garlic powder & paprika

Salt and pepper

Sauce: 2 tbsp teriyaki or sweet chili sauce

Garnish: Diced red onion, crushed peanuts, and fresh cilantro

Instructions
Season & Grill: Toss shrimp with olive oil, garlic powder, paprika, salt, and pepper. Grill or sear in a hot pan for 2 minutes per side until beautifully charred.

Assemble: Press your warm vegetable rice firmly into a small bowl or ramekin, then invert it onto the center of a plate to create a neat tower.

Plate: Arrange the grilled shrimp on top. Spoon the sauce around the base of the rice plate, and scatter chopped peanuts, red onion, and cilantro over top.
