🧀 Cheese Stick Cookies — Kastengel
Buttery. Cheesy. Dangerously addictive — one batch is never enough and everyone always asks for the recipe.
Ingredients:
1½ cups all-purpose flour
¼ cup cornstarch
¼ tsp baking powder
⅔ cup unsalted butter, softened
2 egg yolks
1½ cups edam or sharp cheddar cheese, finely grated
Pinch of salt
Topping:
1 egg yolk (for egg wash)
¾ cup sharp cheddar or parmesan, grated
Steps:
Preheat oven to 300°F (150°C) and line baking sheets with parchment paper
Beat butter and egg yolks together until just combined — don't overmix
Sift in flour, cornstarch, baking powder, and salt
Add grated cheese and mix until a soft dough forms
Shape into a flat disc, wrap in plastic and refrigerate 30 minutes 🕐
Roll dough on a lined surface to ¼ inch thickness
Brush top with egg yolk and press grated cheese firmly on top
Cut into finger-sized sticks — about ½ inch wide and 1½ inches long
Arrange on baking sheet spaced apart — freeze 15 minutes before baking 🔑
Bake 20–25 minutes until golden and firm
Cool completely before eating — they crisp up as they cool 🤍
