Ingredients:
1 Egg

200g Unsweetened Applesauce (Compote ssa)

2 tbsp Almond Butter (or any nut butter)

100g Rolled Oats

60g Flour

½ tsp Baking Powder

1 handful of Chocolate Chunks

Toppings: Hazelnuts, extra chocolate, & nut butter drizzle

👩‍🍳 How to Make It:
Mix Wet: Whisk the egg, unsweetened applesauce, and almond butter together in a bowl until smooth.

Add Dry: Stir in the rolled oats, flour, and baking powder. Mix well and let the oats absorb the moisture for a minute.

Fold: Gently fold in a handful of chocolate chunks.

Shape: Scoop the batter into small mounds on a baking sheet lined with parchment paper.

Top & Bake: Add extra chocolate chunks and hazelnuts on top. Bake in a preheated oven at 180°C for 15 minutes.

Finish: Drizzle some extra almond or peanut butter on top once baked.

INGREDIENTS:
For the Perfect Meringue:

3 egg whites

170g powdered sugar

1 tsp cornstarch (Maïzena)

1 tsp lemon juice

The "Stay-Crispy" Secret Layer:

40g white chocolate + 15g grape seed oil (melted together)

For the Mascarpone Cream:

200g heavy whipping cream

150g mascarpone cheese

2 tbsp powdered sugar

For the Topping:

Fresh mixed berries (Raspberries, blueberries, blackberries, red currants, pomegranate)

Red fruit coulis (berry sauce)

Fresh mint leaves & edible gold leaf (optional)

👩‍🍳 INSTRUCTIONS:
Whip the Meringue: Whip the 3 egg whites while gradually adding 170g of powdered sugar until the mixture is thick, glossy, and holds stiff peaks. Gently fold in the cornstarch and lemon juice.

Pipe & Bake: Transfer to a piping bag with a star nozzle. Pipe small nest shapes in a large circle on a baking sheet lined with parchment paper. Bake in a preheated oven at 90°C for 1 hour 45 minutes to 2 hours until completely dry.

The Secret Step: Once cooled, lightly brush the inside of the nests with the melted white chocolate and oil mixture. This blocks moisture and keeps your meringue perfectly crunchy!

Make the Cream: Whip the heavy cream, mascarpone, and powdered sugar together until smooth and thick.

Assemble: Pipe a layer of cream inside the nests, add a few fresh berries, cover with another gorgeous swirl of cream, and top with more fresh fruits.

Final Touch: Drizzle with red fruit coulis and decorate with fresh mint and gold leaf. Keep refrigerated until ready to serve!

Salt & Pepper (to taste)

2 tsp Paprika

1 tbsp Flour

For the Salad Base:

200g Cherry Tomatoes (halved)

150g Radishes (sliced)

½ Cucumber (diced)

½ Red Onion (thinly sliced)

1 Avocado (diced)

100g Feta Cheese (crumbled)

For the Creamy Dressing:

1 tbsp Fromage Blanc (or Greek yogurt)

1 tbsp Hummus

1 generous squeeze of Fresh Lemon Juice

Garlic powder (or minced garlic)

Salt & Pepper

Sesame seeds

👩‍🍳 Instructions:
Prep the Chickpeas: Take 300g of rinsed chickpeas, add a drizzle of olive oil, salt, pepper, 2 teaspoons of paprika, and 1 tablespoon of flour. Mix everything until the chickpeas are well coated.

Make them Crunchy: Air-fry at 180°C for 15 minutes (or bake them in a preheated oven for 30 minutes) until golden and crispy.

Assemble the Salad: In a large serving bowl, add your warm crispy chickpeas, tomatoes, radishes, cucumber, red onion, avocado, and crumbled feta cheese.

Whip up the Dressing: In a small bowl, whisk together the fromage blanc, hummus, lemon juice, garlic, salt, pepper, and sesame seeds until smooth.

Milk: 50g milk of your choice

Toppings (Pick your favorite): Pistachio cream, peanut butter, or raspberry spread

The Crunch: Melted dark chocolate & crushed nuts (pistachios, peanuts, or almonds)

👩‍🍳 Instructions:
In a glass or jar, combine the oats, chia seeds, Greek yogurt, sweetener, and milk. Mix everything thoroughly.

Smooth out the top and layer your favorite spread (like pistachio cream or peanut butter).

Pour a thin layer of melted dark chocolate over the spread and top with crushed nuts.

Pop on a lid and refrigerate for at least 3 hours (ideally overnight).

INGREDIENTS:
•200g caster sugar
•86g unsalted butter (room temp)
•35g neutral oil
•2 large eggs
•1/2 tsp salt
•190g all-purpose flour
•1 tsp baking powder
•1/4 tsp baking soda
•80g Greek yogurt + 50g milk
•2-3 kinder bueno bars (chopped)
•40g chocolate chunks or chips
•30g chopped roasted hazelnuts
INSTRUCTIONS:
•Line the muffin tray and keep it aside
•In a bowl sieve flour, baking powder, baking soda & salt.
•In a separate bowl cream butter & sugar using electric hand mixer until light and fluffy
•Add eggs one at a time, vanilla extract, oil mix well.
•Add dry ingredients and milk+ yogurt mixture in wet ingredients in batches, gently fold. Add chocolate chunks, chopped kinder bueno and chopped roasted hazelnut and mix until combine. (Do not overmix)
• Divide the batter evenly into a lined muffin tin. Bake at 425°F (220°C) for 5 minutes, then reduce the oven temperature to 375°F (190°C) without opening the oven. Continue baking for 15 minutes, or until a toothpick inserted into the center comes out with little crumbs. Remove from the oven and let it cool for 5 minutes
•Once slightly cooled, core the centre of each muffin and pipe in your filling, chocolate hazelnut duo, classic chocolate, or white hazelnut spread. (Whatever you prefer)
• Finish with a generous drizzle of hazelnut spread, then top with Kinder Bueno pieces and a sprinkle of chopped hazelnuts for that perfect crunch. ENJOY!

Eggs: 3 whole eggs

Flour (or Cornstarch/Maizena): 90g

Baking Powder: A pinch

Shredded Mozzarella: A generous handful

Greek yogurt (Fromage blanc)

Herbs & Spices (Dried oregano/thyme)
