Banana Bread Cinnamon Rolls

Ingredients:

For the Dough:

• 1 cup warm milk (about 110°F or 43°C)

• 1/4 cup granulated sugar

• 2 1/4 teaspoons active dry yeast

• 1/2 cup unsalted butter, melted

• 1 cup mashed ripe bananas (approximately 2-3 bananas)

• 1 teaspoon vanilla extract

• 1/2 teaspoon salt

• 4 cups all-purpose flour

For the Filling:

• 1/2 cup unsalted butter, softened

• 1/2 cup brown sugar, packed

• 2 tablespoons ground cinnamon

For the Cream Cheese Frosting:

• 8 oz (225g) cream cheese, softened

• 1/4 cup unsalted butter, softened

• 1 cup powdered sugar

• 1 teaspoon vanilla extract

Instructions:

1. Activate the Yeast:

• In a small bowl, combine the warm milk and granulated sugar. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until it becomes frothy.

2. Prepare the Dough:

• In a large mixing bowl, combine the melted butter, mashed bananas, vanilla extract, and salt. Add the activated yeast mixture and stir to combine.

• Gradually add the flour, one cup at a time, mixing until a soft dough forms.

• Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.

• Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for 1-2 hours, or until it doubles in size.

3. Prepare the Filling:

• In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined.

4. Assemble the Rolls:

• Preheat your oven to 375°F (190°C).

• Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle approximately 12x18 inches.

• Spread the cinnamon-sugar filling evenly over the dough, leaving a small border around the edges.

• Starting from one long edge, tightly roll the dough into a log.

• Slice the rolled dough into 12 equal pieces and place them in a greased 9x13-inch baking dish.

• Cover the dish and let the rolls rise for an additional 30 minutes.

5. Bake:

• Bake the rolls in the preheated oven for 25-30 minutes, or until they are golden brown and cooked through.

6. Prepare the Frosting:

• While the rolls are baking, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.

7. Serve:

• Once the rolls are done baking, remove them from the oven and allow them to cool slightly. Spread the cream cheese frosting over the warm rolls and serve.

• 8 slices bacon

• ½ onion, diced

• 3 cloves garlic, minced

• ½ teaspoon dried thyme (or 2 sprigs fresh)

• 1 teaspoon kosher salt

• ½ teaspoon black pepper

• 2½ cups chicken broth

• ⅔ cup heavy cream

• 1 teaspoon cornstarch

• 1 cup shredded cheddar cheese

• ½ cup sour cream

3. Prepare the Soup Base: Transfer the sautéed onion to a slow cooker. Add the diced potatoes, minced garlic, dried thyme, salt, pepper, and chicken broth. Stir to combine.

4. Slow Cook: Cover and cook on high for 4 hours or on low for 6-8 hours, until the potatoes are tender.

Lazy Slow Cooker Chicken Cheesesteak Sandwiches

Ingredients:

• Caramelized Onions:

• 12 oz frozen diced onions (fresh onions can also be used)

• 2 tablespoons olive oil

• Chicken Cheesesteak:

• 2 lbs boneless, skinless chicken breasts

• 8 oz canned sliced mushrooms, drained (fresh mushrooms can also be used)

• 1 teaspoon garlic salt

• 1 teaspoon oregano

• ¼ teaspoon fresh ground pepper

• 4 hoagie rolls (crusty Italian sub rolls)

• 4 slices of American, provolone, cheddar cheese, or cheese whiz

Directions:

1. Caramelize the Onions:

• Place the diced onions and olive oil into the slow cooker. Cook on high for 5-6 hours or on low overnight until the onions are caramelized and golden brown. This process develops a deep, sweet flavor that enhances the overall taste of the sandwich. If making the onions in advance, store them in a closed container in the refrigerator.

2. Prepare the Chicken:

• Add the drained mushrooms to the slow cooker with the caramelized onions and stir to combine. Place the chicken breasts on top of the onion and mushroom mixture. Sprinkle the chicken with garlic salt, oregano, and fresh ground pepper. Cover and cook on low for 3-4 hours, or until the chicken reaches an internal temperature of at least 165°F. This ensures the chicken is fully cooked and safe to eat.

3. Shred the Chicken:

• Remove the chicken breasts from the slow cooker and use two forks to shred the meat into bite-sized pieces. Return the shredded chicken to the slow cooker, mixing it with the onions and mushrooms. Cook on low for an additional hour to allow the flavors to meld together. Once the chicken mixture is ready, switch the slow cooker to warm until you are ready to assemble the sandwiches.

4. Assemble the Sandwiches:

• Preheat your broiler. Cut open the hoagie rolls and fill them with the chicken mixture. Top with your choice of cheese, such as American, provolone, cheddar, or cheese whiz. Place the sandwiches under the broiler for about 5 minutes, or until the cheese is melted and bubbly. Be sure to keep an eye on them to prevent burning.

5. Serve:

• Close the sandwiches and serve hot. Enjoy your Lazy Slow Cooker Chicken Cheesesteak Sandwiches with a side of chips, a salad, or your favorite side dish. This delicious and easy meal is sure to be a hit with the whole family!
