Banana Bread Cinnamon Rolls
Ingredients:
For the Dough:
• 1 cup warm milk (about 110°F or 43°C)
• 1/4 cup granulated sugar
• 2 1/4 teaspoons active dry yeast
• 1/2 cup unsalted butter, melted
• 1 cup mashed ripe bananas (approximately 2-3 bananas)
• 1 teaspoon vanilla extract
• 1/2 teaspoon salt
• 4 cups all-purpose flour
For the Filling:
• 1/2 cup unsalted butter, softened
• 1/2 cup brown sugar, packed
• 2 tablespoons ground cinnamon
For the Cream Cheese Frosting:
• 8 oz (225g) cream cheese, softened
• 1/4 cup unsalted butter, softened
• 1 cup powdered sugar
• 1 teaspoon vanilla extract
Instructions:
1. Activate the Yeast:
• In a small bowl, combine the warm milk and granulated sugar. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until it becomes frothy.
2. Prepare the Dough:
• In a large mixing bowl, combine the melted butter, mashed bananas, vanilla extract, and salt. Add the activated yeast mixture and stir to combine.
• Gradually add the flour, one cup at a time, mixing until a soft dough forms.
• Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
• Place the dough in a lightly oiled bowl, cover with a damp cloth or plastic wrap, and let it rise in a warm place for 1-2 hours, or until it doubles in size.
3. Prepare the Filling:
• In a small bowl, mix together the softened butter, brown sugar, and ground cinnamon until well combined.
4. Assemble the Rolls:
• Preheat your oven to 375°F (190°C).
• Once the dough has risen, punch it down and transfer it to a floured surface. Roll it out into a rectangle approximately 12x18 inches.
• Spread the cinnamon-sugar filling evenly over the dough, leaving a small border around the edges.
• Starting from one long edge, tightly roll the dough into a log.
• Slice the rolled dough into 12 equal pieces and place them in a greased 9x13-inch baking dish.
• Cover the dish and let the rolls rise for an additional 30 minutes.
5. Bake:
• Bake the rolls in the preheated oven for 25-30 minutes, or until they are golden brown and cooked through.
6. Prepare the Frosting:
• While the rolls are baking, beat together the softened cream cheese, softened butter, powdered sugar, and vanilla extract until smooth and creamy.
7. Serve:
• Once the rolls are done baking, remove them from the oven and allow them to cool slightly. Spread the cream cheese frosting over the warm rolls and serve.
