Chili Lime Shrimp with Avocado Salsa 🍤🥑
🍽 Ingredients:
🍤 1 lb large shrimp, peeled and deveined
🧂 1 teaspoon chili powder
🍋 1 tablespoon lime zest
🍊 1 tablespoon lime juice (plus extra for garnish)
🧄 2 cloves garlic, minced
🧈 1 tablespoon olive oil (for cooking)
🧂 Salt and pepper, to taste
🌱 Fresh cilantro for garnish
For the Avocado Salsa:
🥑 2 ripe avocados, diced
🍅 1/2 cup cherry tomatoes, halved
🧅 1/4 red onion, finely diced
🌶️ 1 small jalapeño, seeded and finely chopped (optional for heat)
🍋 1 tablespoon lime juice
🧂 Salt and pepper, to taste
🍳 Instructions:
1️⃣ Marinate the shrimp: In a small bowl, mix together chili powder, lime zest, lime juice, minced garlic, salt, and pepper. Toss the shrimp in the marinade and refrigerate for 15-20 minutes to allow the flavors to soak in.
2️⃣ Make the avocado salsa: In a medium bowl, combine diced avocados, cherry tomatoes, red onion, and jalapeño. Drizzle with lime juice and season with salt and pepper. Gently toss to combine.
3️⃣ Cook the shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp in a single layer and cook for 2-3 minutes per side, until they turn pink and opaque.
4️⃣ Assemble the dish: Serve the chili lime shrimp on a plate, topped with a generous scoop of avocado salsa. Garnish with fresh cilantro and an extra squeeze of lime juice.
5️⃣ Serve and enjoy: Enjoy the chili lime shrimp with avocado salsa on its own or with a side of rice, tortillas, or a fresh salad.
