🍋🍝 This White Wine Lemon Pasta with Crispy White Beans and Shallots is bright, buttery, savory, and full of texture.
White beans and shallots are fried in butter with garlic, salt, and black pepper until golden, then set aside while the pasta sauce comes together. White wine, pasta water, Parmesan, fresh lemon zest and juice, and chopped preserved lemon create a silky sauce with just the right balance of richness and sharp, citrusy flavor.
The pasta is tossed directly into the sauce with plenty of fresh parsley, then finished with the crispy beans and shallots, more Parmesan, and freshly cracked black pepper. Simple enough for a weeknight, but special enough to share around the table. 🤍
Abridged recipe:
Fry sliced shallots and well-dried white beans in a few tablespoons of butter with garlic, salt, and pepper until golden and crisp. Transfer to a plate.
In the same pan, sauté more garlic, then add dry white wine and simmer until slightly reduced.
Add reserved pasta water, Parmesan, lemon zest, lemon juice, and finely chopped preserved lemon. Stir until glossy.
Toss in the cooked pasta and chopped parsley.
Plate and top with the crispy beans and shallots, extra Parmesan, and black pepper.
