🍓 Grilled Strawberry Cheesecake Sandwiches

* Prep time: 10 minutes
* Cook time: 10 minutes
* Servings: 3 Sandwiches

🛒 Ingredients
For the Cheesecake Filling:
* 8 oz (225g) Cream cheese, softened to room temperature
* 1/4 cup Powdered sugar
* 1/2 tsp Vanilla extract
* A pinch of salt (to balance the sweetness)
For the Sandwich:
* 6 slices of thick-cut Brioche or White Toast bread (keep the crusts on)
* 1 cup Fresh strawberries, thinly sliced
* 3-4 tbsp Unsalted butter, softened (for spreading on the bread)

👩‍🍳 Preparation
* Prepare the Cream: In a small bowl, whisk the softened cream cheese, powdered sugar, vanilla, and salt until completely smooth and fluffy.
* Assemble the Layers:
* Spread a generous, thick layer of the cream cheese mixture onto three slices of bread.
* Carefully arrange the strawberry slices in a single layer on top of the cream, ensuring some slices touch the edges so they are visible from the side.
* Top with the remaining three slices of bread to close the sandwiches.
* Butter the Exterior:
Spread a thin, even layer of softened butter on the outside of the top and bottom of each sandwich. This is the secret to the golden-brown crust in the photo.
* Grill to Perfection:
* Heat a non-stick skillet or griddle over medium-low heat.
* Place the sandwiches in the pan and cook for 3–4 minutes per side.
* Tip: Press down gently with a spatula to ensure even browning. Cook until the bread is deep golden brown and the filling is warm and melty.
* Serve:
Cut the sandwiches diagonally (or leave whole) and serve immediately while the exterior is crunchy.
✨ Pro-Tips for the "Picture Perfect" Look
* Don't over-heat: Use medium-low heat. If the pan is too hot, the bread will burn before the cream cheese gets warm.
* The Strawberry Reveal: For that exact look in the photo, place the strawberry slices so they slightly overlap the edge of the bread before you close the sandwich.
* Granulated Sugar Crust: For extra crunch, you can sprinkle a tiny bit of granulated sugar onto the buttered side of the bread before placing it in the pan.

🍫 Reese's Pieces Cookie Bars 🍬
📝 Ingredients
¾ cup (1½ sticks) unsalted butter, softened
½ cup granulated sugar
½ cup packed light brown sugar
1 teaspoon pure vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon fine salt
1 cup Reese's Pieces candy, divided
½ cup semi-sweet chocolate chips
👩‍🍳 Instructions
Preheat and Prepare: Preheat your oven to 350°F (175°C). Lightly grease an 8x8-inch or 9x9-inch baking pan with butter or line it with parchment paper, leaving an overhang for easy removal.

Cream Butter and Sugars: In a large mixing bowl, use an electric mixer on medium speed to beat the softened butter with both sugars for 2-3 minutes, until the mixture is light, fluffy, and pale in color. Beat in the vanilla extract until combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, and salt to ensure even distribution.

Form the Dough: With the mixer on low speed, gradually add the dry ingredients to the butter mixture. Mix just until no streaks of flour remain and a soft dough forms. Use a spatula to gently fold in ½ cup of the Reese's Pieces and all of the chocolate chips.

Press and Top: Transfer the dough to your prepared baking pan. Press it down firmly and evenly into all corners. Sprinkle the remaining ½ cup of Reese's Pieces evenly over the top, pressing them in lightly so they adhere.

Bake and Cool: Bake for 20-25 minutes, or until the top is set, the edges are lightly golden, and a toothpick inserted into the center comes out with just a few moist crumbs (not wet batter). Allow the bars to cool completely in the pan set on a wire rack before slicing into squares.
