One of the easiest ways to stretch your garden harvest is learning how to use every edible part of the plant.
That's exactly why I save garlic scapes.
Instead of tossing them in the compost pile, I dehydrate them and grind them into powder. It makes a wonderful seasoning for soups, stews, roasted vegetables, eggs, and homemade bread.
If you're growing garlic and cutting off scapes, don't throw them away!

Every year I look forward to garlic scape season.
Most people know garlic bulbs, but those curly green stalks that appear before the bulbs mature are edible too. Nothing goes to waste around here, so today I'm dehydrating garlic scapes to turn into homemade garlic scape powder.
It's one of my favorite ways to preserve the harvest because the flavor is amazing and it stores well for months.

The difference between store bought and homegrown...and now you know.

Look at the difference between homegrown strawberries and store-bought frozen strawberries after freeze drying!

Freeze drying has a way of revealing what’s really there. The top tray is store-bought frozen strawberries, while the bottom tray is strawberries grown right here on the homestead. Same process, completely different result.

When the water is removed, quality becomes impossible to hide. Flavor, texture, color, and even imperfections are put on full display.

Seeing this has me even more excited for the future. I can’t wait until all of my fruit trees, berries, muscadines, and other perennial crops start producing. There’s just something special about growing your own food and seeing the difference for yourself. 🍓🌱

Paid partnership with LĒVO. They sent me this bundle for free so I could test it and share my experience.

I’ve been wanting to try this for a while, so I’m excited to finally have it in my kitchen.

This is the LĒVO II+ infusion machine, and today I’m experimenting with something a little different - lavender flowers infused into homemade maple syrup I made right here on my homestead.

I wasn’t sure what to expect, but the smell while this was infusing was absolutely incredible. Light floral lavender with warm maple syrup is such a cozy combination.

I’m already thinking:
🍁 pancakes
🍁 tea
🍁 homemade ice cream
🍁 mocktails
🍁 desserts

One thing I’m really loving about this machine is being able to experiment without babysitting a pot on the stove the entire time.
